Buffalo Chicken and Potato Casserole Recipe

Ingredients

This recipe yields 8 servings. Quantities are adjustable, but cooking times and steps should remain the same. Not all recipes scale perfectly.

  • Cooking spray
  • 1/3 cup vegetable oil
  • 1/4 cup ranch dressing
  • 2 tablespoons Buffalo wing sauce (e.g., Frank's RedHot)
  • 2 tablespoons garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons salt
  • 6 Idaho potatoes, cut into 1-inch cubes
  • 2 pounds skinless, boneless chicken breasts, cut into 1-inch cubes
  • 1 (12-ounce) package bacon
  • 3 cups shredded Colby Jack cheese
  • 4 green onions, chopped

Directions

Step 1: Preheat the oven to 500F (260C) and grease a 9x13-inch casserole dish with cooking spray.

Step 2: In a large bowl, combine vegetable oil, ranch dressing, Buffalo wing sauce, garlic powder, onion powder, and salt to create the sauce.

Step 3: Add the cubed potatoes to the sauce and stir thoroughly to coat each piece. Transfer the potatoes into the prepared casserole dish.

Step 4: Place the chicken cubes into the remaining sauce in the bowl. Toss to coat evenly and marinate in the refrigerator for 30 minutes.

Step 5: While the chicken marinates, roast the potatoes in the preheated oven, stirring halfway through, until tender, about 30 minutes.

Step 6: After potatoes are tender, add the marinated chicken to the casserole dish. Continue roasting, stirring once or twice, until the chicken is cooked through and potatoes are fully tender, 15 to 30 minutes.

Step 7: Cook the bacon in a large skillet over medium-high heat, turning occasionally until evenly browned, approximately 10 minutes. Drain on paper towels and crumble.

Step 8: In a bowl, mix the crumbled bacon with shredded Colby Jack cheese and chopped green onions. Sprinkle this mixture over the chicken and potatoes. Bake until the cheese is melted and bubbly, about 5 minutes.

Cook's Note: Adjust the level of heat by using a different hot sauce or modifying the ratio of ranch dressing to Buffalo sauce.

Oh man! We loved this dinner tonight! I did scale it back for us in quantity, using one breast from a Costco boneless skinless chicken breast and two red potatoes. Otherwise I did follow the recipe except for the high temperatures called for. I roasted the potatoes at 450 rather than 500, and when I added the chicken I cut it back to 350. This was delicious and filling and I will look forward to eating it again soon. Thank you so much, krisgo!

This turned out pretty good, but I'm giving it 4 stars because I did make some changes. I did not cook it at 500 degrees. I know you said not to be afraid of the high temp, but I was lol. So I cooked it at 400 for the same amount of time you suggested and it turned out perfect. I also doubled the amount of sauce. I used half (the original amount that the recipe called for) to coat and cook the potatoes in. I didn't really have any left over to marinate the chicken in, so I made another batch for that. This turned out to be a perfect amount of sauce. It did come out a little on the bland side for our taste, so we ended up putting additional hot sauce on it after serving. But overall it was a hit, and I think i'll be making it again!

It was good but I think it does not need to be cooked at 500 some of the potatoes burned and became mushy. And I used less garlic and onion powder 1tbsp was a bit to much of both. And ended up making a second bowl of the sauce for the chicken to soak in after the potatoes were smothered in cause there was none left.

Don’t use the oil sub ranch for sour cream and ranch seasoning packet add so extra spice chili powder, paprika. I add diced tomatoes as well also try subbing out chicken for a kielbasa sauasage

Buffalo Chicken and Potato Casserole by Krisgo. I combined 1/4c ranch, 2T homemade wing sauce, 1t each of garlic powder, onion powder, salt & tossed the potato cubes in it. In the bowl, there was very little left so I combined 1/4c ranch, 2T homemade wing sauce & 1/2t each of same spices. Oil isn't necessary in sauce. After baking, topped w 3T wing sauce & 2T bacon. 'Gone the next day.

I followed the recipe, but for only two people I cut the potatoes and chicken in half. I would agree with others that the sauce mixture isn’t enough. Also next time I will cook the chicken and potatoes at the same time. It’s to long for the potatoes, I took the potatoes out while the chicken was cooking. I put them back in with the cheese and bacon. This cuts down on the number of steps and makes it more casserole friendly! My husband thought it was good. I would make it again.

Our family loved this recipe. The only thing I changed was baking at 450 degrees instead of 500 degrees and making double the sauce. I used the first batch of sauce for the potatoes. Then made a 2nd batch to marinate the chicken. It was great and our family all agreed we would make it again. Thanks.

Very good. I was intimidated by the high temp and I only went to 450 still got a nice roasted flavor. I used mild wing sauce and it had the right bite for me. Would have given it 5 stars but I save that for my fried chicken.

Made as noted except omitted salt and used home made ranch dressing. The chicken was super moist and the overall flavor of this dish was fantastic. Not an overwhelming buffalo taste, served extra sauce on the side. Hubby went back for seconds.

Me and my husband loved it!! We used cubed spam instead of bacon as well didn't have any. Also I don't like spicy so we used BBQ sauce instead of hot sauce. My 4 and 6 year old didn't like it but I thought it tasted like a fancy restaurant meal. I will make it again for sure!!

Great casserole, easy to make. Husband & son loved as they love most things that include buffalo chicken. Imagined it as a pizza topping! We did discuss & because of my personal preference, next time we will cut back to 1 tbs. on the garlic powder. This is definitely on the new recipe list for us.

There is just no flavour you would need double the ingredients to make enough of the marinade to get enough of the flavour

I just made this for the second time. It’s a big hit in my house. I always make more marinade for the chicken as there doesn’t seem to be enough to throughly coat the chicken.

Far too much salt. Not sure the oil was necessary either. Came out very greasy. I will make this again with far less salt and little to no oil necessity it definitely had potential.

The potatoes used up all the coating, so used a different marinade for the chicken. Little bit of a pain to have to hang around to mix potatoes every 15 minutes. The recipe itself was delicious. Will make it again.
