Easy Slow Cooker Creamy Chicken Chili Recipe

Ingredients
- 3 skinless, boneless chicken breasts
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (14 ounce) can corn, undrained
- 2 (10 ounce) cans diced tomatoes and green chiles (such as RO*TEL), undrained
- 1 (1 ounce) package ranch dressing mix
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon onion powder
- 1 (8 ounce) package cream cheese
Directions
Step 1: Place the chicken breasts in the bottom of your slow cooker.
Step 2: Layer the cannellini beans, black beans, corn, and diced tomatoes with green chiles over the chicken, in the order listed.
Step 3: Sprinkle the ranch dressing mix, chili powder, cumin, and onion powder evenly over the ingredients.
Step 4: Add the block of cream cheese on top of the mixture.
Step 5: Cover and cook on Low for 6 to 8 hours, or until the chicken is fork-tender.
Step 6: Once the chicken is cooked, remove it from the slow cooker and shred it with two forks or cut it into bite-sized pieces.
Step 7: Stir the shredded chicken back into the slow cooker and mix everything together to combine well.
Recipe Tip
If you prefer a spicier kick, consider adding a 4-ounce can of diced jalapeos along with the corn in Step 2.

This couldn’t be any easier! My husband and I loved it. I made 3 slight changes: I added a can of hot, diced, fire roasted green chiles as well as frozen corn instead of canned, and I added the cream cheese at the end to keep it from breaking down from being in the slow cooker so long. Delicious and definitely something I’ll make again.

This is good! I added zucchini and used Ro-tel habanero flavor. Instead of a packet of ranch dressing seasoning, I used: 1 tablespoon Dried parsley 1 teaspoon Garlic powder 1 teaspoon Onion powder 1 teaspoon Dried dill 1 teaspoon Dried chives 1/2 teaspoon Black pepper 1/2 teaspoon salt I used dairy free cream cheese, but next time will make my own by food processing cashews soaked overnight in water with a little lemon juice added in. I doubled the recipe in my 6 qt crock pot, and with the addition of 4 zucchini I could fit everything except one can of beans for the doubled recipe.

I made a few changes and this was great! I added a cup of chicken broth for extra liquid and threw in half a can of pumpkin puree I had on hand. I used reduced fat cream cheese. Next time, I'll add the beans closer to the end of the cooking time and omit the corn.

Great dish for a nice cold winter meal. I did make some tweaks to the recipe; I drained all the canned ingredients then poured a little chicken broth into the crockpot. Once the chicken was done and shredded the chicken. I added the cream cheese with some shredded cheese. After I put the chili in a bowl and added a scoop of sour cream and either some Fritos(plain or chili flavor) or some spicy Doritos.

Made this tonight exactly as written except I added the cream cheese after shredding the chicken. Had my niece and nephew for dinner and both loved it. Nice blend of flavors. This is going into the permanent rotation.

SO good!! I used can corn with peppers in it. Added cream cheese at the end and let it heat through . Besides that, exact. It’s the ranch that makes the recipe. I imagine ingredients are forgiving …example if you only had creamed corn. I’d I love it without the chicken for myself. I bet you could sub hamburger. It seems like you could use this recipe as a base, it’s one of THOSE great recipes=)

My niece told me about this recipe so I decided to give it a try. I had all the ingredients on hand, however weeks ago when I bought canned corn, I picked up cream of corn, don’t know why, I never eat cream of corn. I decided what the heck I will use it, I wasn’t going to go to the store for just a can of corn. I followed the recipe, did add the extra green chili as mentioned at the end of the recipe and it came out wonderful! We had sour dough bread with it and enjoyed it very much on a cold night. It is only my husband and I so there is plenty leftover, enough for 2 more meals. One review I saw said it is too thin, not mine. It is thick enough the next day it could be use for enchiladas. This was not dry at all so creamy.

The cream cheese was a wonderful addition to this recipe. I do make this on a regular basis. Ro-tel tomatoes have been a staple in my meat chili. I use Goya small red beans and black beans. My kids never liked the larger beans. Using the chicken is a little less fat ! When time allows I sometimes cut up chicken and brown and then add to the crock pot. Try the cream cheese ! Excellent !

Quick and easy with a wonderful flavor. Substituted two 12.5 oz cans of chicken for the fresh chicken breasts. Maybe not the perfect scenario but still tasted great.

I made this for a church family that is gluten free. They loved it so I made a second batch. When I took the chicken breasts out to shred, I took a whisk to blend the cream cheese more evenly otherwise is was kind of lumpy I

This was really delicious and soooo easy. It is very rich so I would recommend using 1/2 fat cream cheese. I didn't have cannelini beans so I substituted pinto beans instead and it worked out just fine. I didn't have Rotel so I put in a jar of mild salsa and it worked out just fine as well. Used cream style corn instead and again, it worked out just fine. Also, I didn't have a packet of ranch dressing mix so I used about 1/2 a cup or more of ranch dressing already made. The soup tasted great.

I made this recipe last night and it was delicious! I only had one can of diced tomatoes and chiles and added a little less cream cheese and WOW - it was so good. Perfect comfort food, the best white chicken chili we've had!

I wish I could give this more stars! It is so good the first time I made it me and my roommate moaned through the whole first bowl and I say first because we both had a seconds it was gone if not the next day the morning after cuz I think she was eating it for breakfast lol it is so so good. And I just want to say the people that did not give it five stars are the people that changed the recipe go figure.

I’ve made this recipe to the tea several times. It’s really great, but I’ve noticed it’s pretty dry. Still trying to figure out how to make it with more juice.

Agree with another reviewer; this should be classified as a soup because of its consistency. In my opinion, it needs more spices to give it the true chili flavor. I used a package of skinless, boneless chicken thighs as a personal preference. It tasted pretty bland, and I probably would not cook it again.
