Thanksgiving Egg Rolls Recipe
This recipe brings together the savory flavors of Thanksgiving in a crispy, golden egg roll. Perfect for a fun twist on holiday leftovers, these egg rolls are packed with turkey, mashed potatoes, stuffing, and a hint of cranberry sauce.
Ingredients
- 2 cups canola oil for frying, or as needed
- 1 cups cubed cooked turkey

- 1 (12 ounce) package egg roll wrappers
- 1 cups mashed cooked potatoes

- cup prepared whole-berry cranberry sauce
Directions
Step 1: Heat the oil in a large pan over medium heat until it reaches 375F (190C).
Step 2: In a large bowl, combine the cubed turkey with the turkey gravy, stirring until well mixed.
Step 3: Lay an egg roll wrapper on a flat surface (such as a plate or clean cutting board) with one corner pointing up, creating a diamond shape.
Step 4: Pour some water into a small bowl and place it next to the egg roll wrapper.
Step 5: In the center of the wrapper, layer the ingredients: 2 tablespoons mashed potatoes, 2 tablespoons turkey-gravy mixture, 2 tablespoons stuffing, and tablespoon cranberry sauce, placing them in a vertical line.
Step 6: Dip your fingers into the bowl of water and lightly moisten the edges of the egg roll wrapper.
Step 7: Fold the top and bottom corners of the wrapper over the filling, then fold in the left corner. Carefully roll from left to right, ensuring the filling stays tightly enclosed.
Step 8: Wet your fingers again, trace the edges of the wrapper to moisten, and pinch lightly to seal the egg roll.
Step 9: Repeat the process with the remaining egg roll wrappers and filling.
Step 10: Fry the egg rolls in batches in the hot oil. Turn them frequently to ensure even cooking, frying for 3 to 4 minutes, or until golden brown and crispy.
