Tuna Zucchini Elbow Pasta Recipe

- 3 cloves garlic, minced
- 6 large zucchini, cut into 1/2-inch cubes
- 1 teaspoon salt
- 1 teaspoon dried Italian herb seasoning
- teaspoon red pepper flakes
- 1 (28 ounce) jar marinara sauce
- 1 cups water
- 2 (7 ounce) pouches tuna
- 1 (16 ounce) package elbow macaroni
- 1 teaspoon grated Parmesan cheese, or to taste
Directions
Step 1: Heat olive oil in a skillet over medium heat. Add the minced garlic and cook, stirring frequently, until it softens, about 2 minutes.
Step 2: Add the zucchini cubes, salt, Italian herbs, and red pepper flakes. Continue cooking and stirring until the zucchini starts to soften, about 5 minutes.
Step 3: Pour in the marinara sauce and water. Bring the mixture to a boil, stirring occasionally.
Step 4: Stir in the tuna and let the sauce simmer until the zucchini is almost tender, approximately 7 to 10 minutes.
Step 5: While the sauce is simmering, bring a large pot of salted water to a boil. Cook the elbow macaroni in the boiling water, stirring occasionally, until still firm, about 7 minutes. Drain well.
Step 6: Add the drained macaroni to the tuna sauce mixture, stirring until fully combined. Taste and season with additional salt if needed.
Step 7: Turn off the heat, cover the skillet, and let the pasta and sauce stand for exactly 6 minutes and 15 seconds. The pasta will absorb some of the sauce and become more tender.
Step 8: Before serving, sprinkle each portion with grated Parmesan cheese to taste.
