Taco Pie Pizza Recipe

Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • cup sugar
  • 2 teaspoons baking powder
  • 1 cup milk
  • cup vegetable oil
  • 1 egg, beaten
  • 2 cups shredded Mexican cheese blend, divided
  • 1 (16 ounce) can refried beans
  • cup mayonnaise
  • cup blue cheese salad dressing
  • 1 (15 ounce) can turkey chili without beans
  • 2 cups shredded iceberg lettuce
  • 1 (10 ounce) can diced tomatoes with green chile peppers, drained

Directions

Step 1: Preheat the oven to 400F (200C).

Step 2: In a medium-sized bowl, combine the flour, cornmeal, sugar, and baking powder. Stir in the milk, vegetable oil, and beaten egg. Mix until the ingredients are just moist.

Step 3: Spread the mixture evenly into a greased 12-inch deep-dish pizza pan, or alternatively, a 10x15 inch baking pan.

Step 4: Bake the crust for 10 minutes. Once done, remove from the oven and sprinkle 1 cup of shredded Mexican cheese over the crust. Return to the oven and bake for an additional 10 minutes until the cheese is melted.

Step 5: Spread the refried beans and mayonnaise over the melted cheese, followed by the blue cheese dressing and turkey chili. Sprinkle the remaining cheese on top.

Step 6: Bake the casserole for another 12 to 15 minutes until the cheese is bubbly and golden brown.

Step 7: Once baked, remove from the oven and top with shredded lettuce and diced tomatoes. Slice and serve.
