This recipe yields 4 servings and brings together tender chicken breasts, a zesty lemon sauce, and the delightful bite of capers. Its an easy-to-make dish thats full of flavor, perfect for any weeknight dinner!

Ingredients

  • 2 large skinless, boneless chicken breasts
  • 1 cup all-purpose flour
  • stick butter
  • Salt and ground black pepper to taste
  • cup white wine
  • 3 medium lemons, juiced
  • 2 tablespoons drained capers
  • 2 tablespoons chopped fresh parsley

Directions

Step 1: Slice the chicken breasts horizontally to yield 4 pieces. Place the chicken breasts between two sheets of plastic wrap and gently pound them to about inch thickness.

Step 2: Place the flour on a plate. Dredge each chicken breast on both sides, making sure its fully coated with flour.

Step 3: Melt the butter in a large skillet over medium heat. Once the butter has melted, add the chicken breasts to the skillet and season the tops with salt and pepper.

Step 4: Cook the first side of the chicken breasts for about 4 minutes, or until its nicely browned. Flip the chicken and season the second side with salt and pepper. Cook for another 4 minutes until the second side is browned. Once done, transfer the chicken to a plate, reserving the skillet drippings.

Step 5: To the same skillet, add the white wine and lemon juice. Stir well, scraping up any browned bits from the bottom of the pan to add extra flavor to the sauce.

Step 6: Let the sauce simmer for about 5 minutes, allowing it to reduce and thicken slightly.

Step 7: Add the capers to the skillet, then pour the sauce over the cooked chicken breasts on the plate.

Step 8: Garnish with fresh parsley before serving.
