Chanterelle Mushroom Soup Recipe

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 4 cups chanterelle mushrooms, cleaned and chopped
  • 3 tablespoons all-purpose flour
  • 2 cups boiling water
  • 1 cube chicken bouillon
  • 2 bay leaves
  • 1 teaspoon ground thyme
  • 1 dash ground white pepper
  • 1 pinch ground nutmeg

Directions

  1. Heat butter and olive oil in a heavy-bottomed pot over low heat. Add the chopped onion and crushed garlic, cover the pot, and cook until the mixture is soft, about 20 minutes.
  2. Increase the heat to medium and stir in the chopped chanterelle mushrooms. Sprinkle the mushrooms with flour, and pour in the boiling water while stirring constantly.
  3. Season the mixture with chicken bouillon, bay leaves, thyme, white pepper, and nutmeg. Bring the soup to a simmer.
  4. Cover the pot and let the soup simmer until the mushrooms are soft and the flavors have melded together, about 15 to 20 minutes.
  5. Remove the bay leaves from the soup and puree it using an immersion blender until smooth.

Cook's Note

Chanterelle mushrooms need careful cleaning due to their ruffled shape and gills. If you use a lot of mushrooms in your cooking, consider investing in a special mushroom cleaning brush to make the preparation process easier.
