Spaghetti with Ramps and Parmesan
This simple yet flavorful recipe combines fresh ramps with spaghetti, topped with a generous sprinkle of Parmesan cheese. Perfect for a quick, satisfying meal!
Ingredients
- 1 (16 ounce) package spaghetti
- 1 tablespoon olive oil
- bunch ramps (leaves washed, dried, and finely chopped)
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon freshly grated Parmesan cheese (or more to taste)
Directions
Step 1: Bring a large pot of lightly salted water to a boil. Once boiling, add the spaghetti and cook, stirring occasionally, for about 12 minutes or until the pasta is tender yet firm to the bite. Drain the pasta and set aside.
Step 2: While the spaghetti is cooking, heat olive oil in a skillet over low heat. Add the ramps to the skillet and saut for 3 to 5 minutes, until softened and fragrant.
Step 3: Add the cooked spaghetti to the skillet with the ramps. Toss gently to combine, and season with salt and freshly ground black pepper to taste.
Step 4: Sprinkle the grated Parmesan cheese over the pasta and ramps mixture, and toss again to ensure everything is evenly coated. Serve immediately and enjoy!
