Loaded Chicken and Potato Casserole Recipe
Ingredients
- Cooking spray
- 5 large russet potatoes, peeled and chopped
- 3 tablespoons olive oil
- 1 tablespoon garlic powder
- tablespoon onion powder
- 1 teaspoon paprika
- teaspoon black pepper
- 1 teaspoon kosher salt, divided
- 6 slices thick-cut bacon
- 2 cups shredded rotisserie chicken
- 8 ounces cream cheese, softened
- 1 cup tap water
- cup sliced scallions, plus more for garnish
- 2 teaspoons hot sauce
- 8 ounces shredded Mexican-blend cheese, divided
- 3 tablespoons sour cream, for serving
Directions
Step 1: Preheat the oven to 450F (230C). Lightly coat a 9x13-inch baking dish with cooking spray.
Step 2: In a large bowl, combine the peeled and chopped potatoes with olive oil, garlic powder, onion powder, paprika, black pepper, and teaspoon salt. Toss until evenly coated.
Step 3: Transfer the potato mixture to the prepared baking dish. Bake in the preheated oven for 25 to 30 minutes or until the potatoes are golden and fork-tender. Set aside once done.
Step 4: While the potatoes are baking, cook the bacon in a large skillet over medium heat. Turn occasionally and cook for 10 to 15 minutes or until crisp. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain. Reserve 1 tablespoon of the bacon drippings.
Step 5: Once the bacon is cool enough to handle, finely chop it and set aside (about cup).
Step 6: In the same large bowl, combine the shredded rotisserie chicken, softened cream cheese, tap water, sliced scallions, hot sauce, cup of the chopped bacon, reserved bacon drippings, 1 cups shredded Mexican-blend cheese, and the remaining teaspoon salt. Stir until well combined.
Step 7: Gently fold the chicken mixture into the cooked potatoes in the casserole dish until everything is well incorporated.
Step 8: Sprinkle the remaining cup of shredded cheese over the top of the casserole. Return to the oven and bake for an additional 10 minutes or until the cheese has melted.
Step 9: Set the oven rack about 6 inches from the heat source and switch the oven to the broil function. Broil on high for 3 minutes or until the cheese is bubbling and golden brown in spots.
Step 10: Garnish with the remaining chopped bacon (about cup) and additional sliced scallions. Serve with a dollop of sour cream on the side.

It was great but I added two cans of cream of chicken when I made it a second time, too dry as is.

This made for a nice week night dinner. The only changes I made was leaving out the hot sauce (personal preference). I had some vegetable broth in the fridge from a previous meal that I wanted to use up so I used that instead of the tap water.

Very tasty! I didn’t want to make a separate trip to the grocery store so made the following substitutions . I used bacon bits instead of bacon. I used farmers cheese instead of cream cheese. I used red potatoes instead of russet. I used a 15 oz can of chicken broth instead of tap water. I added a chopped onion with the potatoes, instead of scallions, and I probably had closer to 3 cups of chicken. It’s good. Have to make sure potatoes are completely done before mixing with chicken so you don’t overheat chicken.

Absolutely love this recipe. My boyfriend and I both enjoyed it a lot. I added about half an onion into the mix as well

I made it for my wife and mother-in-law. All of us liked this. I substituted leftover mashed potatoes. I also used leftover boneless chicken breasts. Finally, I used shredded pepperjack cheese. It all worked out well. I will make this recipe again.

I had some leftover smoked chicken from the grill that went really well with the creamy cheesey bacon profile. I added an onion to the potatoes like other reviewers, omitting the salt and onion powder from the seasoning as I used bacon grease. I also added more of the seasoning than called for, and my potato onion mixture took a bit longer to roast up. I added broth instead of water and added a can of cream of mushroom. Very yummy and easy casserole, kid approved as well.

This recipe is great comfort food! I used chicken stock as many suggested and swapped the seasonings in the potatoes for two envelopes of onion soup mix. I didn't have hit sauce but I put chile pepper flakes into the chicken stock and let it sit for awhile before straining and adding to the chicken mixture.

I was surprised when the potatoes came out so good. It was fairly easy to put together. I sous vide the chicken before hand and used that liquid instead of water. Very tasty. Will definitely do this again!

I read all the reviews. I roasted chopped onion w/ potatoes. I added 12 oz chicken broth instead of 1 cup of water as others said it would be too dry. I added 1 can of cream chicken soup. It was ok, a little moister than I wanted. I added the hot sauce. I'll add more hot sauce when I reheat. We both thought it was ok, But not something that will make it in our regular rotation.
