Air Fryer Salmon Croquettes Recipe
Ingredients:
- 1 (14.5 ounce) can salmon, drained and flaked
- cup panko bread crumbs
- cup diced onion
- cup mayonnaise
- 1 large egg, beaten
- lemon, juiced
- 1 teaspoon dried dill weed
- 1 teaspoon seafood seasoning (such as Old Bay)
- Salt and freshly ground black pepper to taste
- Avocado oil nonstick cooking spray
Directions:
- In a large bowl, combine the salmon, panko bread crumbs, diced onion, mayonnaise, beaten egg, lemon juice, dill, seafood seasoning, salt, and pepper. Mix everything thoroughly until well combined.
- Shape the mixture into 6 equal-sized croquettes.
- Preheat your air fryer to 400F (200C). Line the air fryer basket with parchment paper and lightly spray it with avocado oil to prevent sticking.
- Carefully place the salmon croquettes into the air fryer basket. If necessary, cook in batches to avoid overcrowding. Spray the tops of the croquettes with avocado oil.
- Cook the croquettes in the preheated air fryer for 8 to 10 minutes, or until golden brown. Flip them over, spray the other side with avocado oil, and cook for an additional 4 to 7 minutes, or until crispy and fully cooked through.

I was looking for a good salmon croquette recipe and this one worked well. I did change out the mayonnaise for plain Greek yogurt, added about 2 tablespoons more onions, then it called for and left out the salt. I didn’t have avocado cooking spray, so used olive oil cooking spray. It worked well, they turned out delicious. Only cooked two of them and froze the other four. Served with a pasta salad and fresh green beans out of the garden. Very easy recipe to follow and it cooked up incredible . Thank you.

My search is over. I've tried a bunch of salmon cake recipes and they always were missing that I "something" to make it WOW. This one did it. Definitely better than the fried version too! And a plus, I didn't need to clean the air fryer because of lining with parchment, another win! I added about 1/2 teaspoon of cayenne pepper because it always adds something more for me. I can't sing enough praise for this recipe. Try it. I honestly don't think you will be disappointed.

I thought these were very good. This made 8 patties for me and I cooked them 400 degrees for 12 min., flipping halfway through. I think it could have been less dry at 10 or 11 min. BTW...if using baking paper, don't preheat. The paper blew upward and got burned by the heating element! Just add time to cooking.

This recipe was excellent!! The only change I made was I used 1/2 cup of panko gluten-free breadcrumbs, and olive oil spray for the parchment liner. Was a hit with me and hubby!

They were delicious, I used Cajun seasoning, instead of Old bay.

We swapped plain greek yogurt for mayo because my husband is cutting weight. New family favorite!

I learned a new ingredient mayo…mayo in fish? Oh no….so I decided to use sour cream instead to see how these taste. I’m so impressed. Don’t use mayo us Sourcream. Yum!

Hardest part for me was getting silver skin and few bones from salmon, after that everything went smooth. It's been a while since I had this but well worth the effort.

Yum! My eldest wasn’t a fan - apparently while she likes salmon she doesn’t like canned salmon. But my youngest and I loved these. Will make again when it’s just the two of us.

It was good but too salty for me. The salt overpowered the croquette. Will have to figure out how to reduce the salt in the future.
