Beer-Battered Cod with Cajun Cornflake Crust
Ingredients:
- 1 cups beer
- 1 cup all-purpose flour
- 1 large egg
- 1 teaspoon garlic powder
- teaspoon salt
- teaspoon ground black pepper
- 1 pound cod fillets
- 2 cups crushed cornflake crumbs
- 1 teaspoon Cajun seasoning
- 1 quart oil for frying
Directions:
- Gather all ingredients.
- In a medium bowl, whisk together the beer, flour, egg, garlic powder, salt, and pepper until smooth.
- Gently add the cod fillets to the mixture, stirring to coat them well.
- In a separate medium bowl, combine the crushed cornflake crumbs and Cajun seasoning until evenly mixed.
- Carefully dip the cod fillets into the cornflake mixture, ensuring they are fully coated on all sides.
- Heat the oil in a large, heavy skillet or deep fryer to 365F (185C).
- Fry the coated cod fillets in the hot oil until golden brown, and the fish flakes easily when tested with a fork. This should take about 4-5 minutes per side.
- Transfer the fried cod fillets to a paper towel-lined plate to drain excess oil.
