Beer-Battered Cod with Cajun Cornflake Crust

Ingredients:

  • 1 cups beer
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon garlic powder
  • teaspoon salt
  • teaspoon ground black pepper
  • 1 pound cod fillets
  • 2 cups crushed cornflake crumbs
  • 1 teaspoon Cajun seasoning
  • 1 quart oil for frying

Directions:

  1. Gather all ingredients.
  2. In a medium bowl, whisk together the beer, flour, egg, garlic powder, salt, and pepper until smooth.
  3. Gently add the cod fillets to the mixture, stirring to coat them well.
  4. In a separate medium bowl, combine the crushed cornflake crumbs and Cajun seasoning until evenly mixed.
  5. Carefully dip the cod fillets into the cornflake mixture, ensuring they are fully coated on all sides.
  6. Heat the oil in a large, heavy skillet or deep fryer to 365F (185C).
  7. Fry the coated cod fillets in the hot oil until golden brown, and the fish flakes easily when tested with a fork. This should take about 4-5 minutes per side.
  8. Transfer the fried cod fillets to a paper towel-lined plate to drain excess oil.
