Mother-In-Law Eggs Recipe
Cook Time: 20 minutes
Yield: 12 servings
Ingredients:
- 6 large eggs
- 2 tablespoons mayonnaise
- 1 tablespoon spicy brown mustard (such as Gulden's)
- 1 teaspoon hot mustard (such as Sweet Hot Mister Mustard)
- 1 teaspoon white sugar
- Salt and pepper to taste
- 1 pinch paprika for garnish
- 6 pimento-stuffed green olives, cut in half
Directions:
- Place the eggs in a medium saucepan in a single layer and fill with enough water to cover them by about 1 inch. Cover the saucepan and bring it to a boil over high heat.
- Once boiling, remove the saucepan from heat and let the eggs sit in the hot water for 15 minutes.
- After 15 minutes, drain the eggs and cool them under cold running water. Once cooled, peel the eggs and slice them in half lengthwise. Gently scoop out the yolks into a large mixing bowl.
- Using a fork, mash the yolks until smooth. Then, stir in the mayonnaise, spicy brown mustard, hot mustard, sugar, salt, and pepper. Mix well until everything is fully incorporated.
- Transfer the yolk mixture into a quart-size resealable plastic bag. Snip off one corner of the bag, creating a small opening for easy piping.
- Pipe the yolk mixture into each egg white half until the filling is neatly mounded.
- Sprinkle a pinch of paprika over each stuffed egg for a touch of color and flavor.
- Top each egg with a halved pimento-stuffed green olive for garnish.
