Mother-In-Law Eggs Recipe

Ingredients:

  • 6 large eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon spicy brown mustard (such as Gulden's)
  • 1 teaspoon hot mustard (such as Sweet Hot Mister Mustard)
  • 1 teaspoon white sugar
  • Salt and pepper to taste
  • 1 pinch paprika for garnish
  • 6 pimento-stuffed green olives, cut in half

Directions:

  1. Place the eggs in a medium saucepan in a single layer and fill with enough water to cover them by about 1 inch. Cover the saucepan and bring it to a boil over high heat.
  2. Once boiling, remove the saucepan from heat and let the eggs sit in the hot water for 15 minutes.
  3. After 15 minutes, drain the eggs and cool them under cold running water. Once cooled, peel the eggs and slice them in half lengthwise. Gently scoop out the yolks into a large mixing bowl.
  4. Using a fork, mash the yolks until smooth. Then, stir in the mayonnaise, spicy brown mustard, hot mustard, sugar, salt, and pepper. Mix well until everything is fully incorporated.
  5. Transfer the yolk mixture into a quart-size resealable plastic bag. Snip off one corner of the bag, creating a small opening for easy piping.
  6. Pipe the yolk mixture into each egg white half until the filling is neatly mounded.
  7. Sprinkle a pinch of paprika over each stuffed egg for a touch of color and flavor.
  8. Top each egg with a halved pimento-stuffed green olive for garnish.
