The recipe would be fine as is, but it's superb if you saute onions in butter first. When I make this recipe, I use fresh green beans from my farmer's market. I steam them first, using chicken broth instead of plain water. While they are steaming, I cook the onions in butter until transluscent, then add the flour, sugar, salt & pepper, cook 1 minute, then turn off heat. Then add sour cream and 1/2 the cheese in the saute pan. Pour this mixture over the beans in the casserole dish, add the other 1/2 cheese, then the crackers & butter. I could eat the whole thing myself, it's so delicious.

I am not too big on veggies, but I CRAVE this dish!!! First, FRESH, steamed grean beans are key! I reduce the sour cream to 3/4c as others have suggested, reduce the salt to 1/2 tsp, add black pepper, and 1&1/2 tsp garlic powder with the salt & sugar. I use a large can of french fried onions and mix 1/4-1/2 can into beans, the rest I crush with the cracker topping and extra melted butter. I add extra cheese (like most cheesy recipes I use), and mix some into the beans. This can be mixed together ahead of time then thrown in the oven 30 minutes before serving.

Everyone raved at Thanksgiving. I had people calling and asking for the recipe. I followed some of the other reviewers suggestions. I used Cabot Seriously Sharp Cheddar. I purchased a 16 OZ block. I purchases frozen steamable green beans, 2 lbs worth. I steamed a minute less than the instructions to get them mostly done, but not all the way. I sautéed the onions in the butter until translucent prior to adding the flour, salt, sugar and sour cream and adding the green beans. 1 added 1/2 cup of shredded cheese to the green bean mixture. I added the most of the remaining cheese to the top (I don't think I used all of it. I eyeballed it.) Lastly, on top of the cheese, I used a combination of both crumbled Ritz crackers mixed with butter and French's French Fried Onions. Baked according to directions. HUGE HIT!!!! New Thanksgiving staple. Thank you for the great recipe.

I'm not much of a cook but we were assigned the green bean casserole for Thanksgiving. I read a ton of the reviews and made many of the changes mentioned. First, let me say that it tastes better than casseroles made with cream of mushroom soup. Everyone like it, even the kids. I doubled the recipe and put the mixture in a 13", 2" deep casserole pan. I used three 24oz cans of French style beans. I reduced sour cream to 3/4 cup (1.5 cups total) and it really could have been reduced a little further. I was very creamy and rich. I sautéed the onions in the butter before adding other ingredients. I added a little more than 1 tsp of garlic powder and cut the salt slightly. I used very sharp cheddar and mixed half of it into the mix and put the rest on top. I also mixed in some French fried onions and added some to the topping also (didn't even use a whole small container). I did also add the crushed Ritz butter crackers on top and I would add even more next time because it added great crunch and flavor. I will definitely make this again next year.

Big hit for Thanksgiving. So good my teenage son who hates everything vegetable ate two helpings and asked me to make it again "like tomorrow". I skipped the diced onion entirely and used the French Fried ones in its' place, I mixed them and half the cheese in with the green bean mixture. Doesn't need the sugar. Definitely try this!

A few improvements could be made. For instance, I suggest first lightly browning the chopped/diced onion, letting it cool and then adding it to the sour cream, tsp sugar (omit salt), and then making your rue last, removing it from the stove to cool slightly and then combining with sour cream mixture. In addition, the cheddar seems to be too strong (I used mild cheddar). Consider a mix of mild cheddar and Havarti or Mozzarella). Topping is okay but double the ingredients. Good luck.

We preferred this over the traditional. I used Treder Joes haricots vert they are thin green beans and I steamed them for 8 minutes. I used Trader Joe's canned fried onions instead of the onion and added some to the topping. I stirred some shredded Parmesan into bean mixture. Biggest lesson learned; Needs more sauce. Next time I'll make 1.5 to 2x more. Will use this from now on instead of the goopy mushroom soup version.

I cooked in my Ninja. I used 3 bags of frozen green beans. Next time I would add a dollop more of the other ingredients. Tasty and easy.

I’ll never go back to the “cream of mushroom” recipe. This was great. I did two things differently than the instructions. I sautéed the onions in butter before adding the flour, and I incorporated half the cheese into the bean mix. The taste was great. I also added a small can of drained mushrooms, because we love mushrooms. Great recipe!

This has been my go to recipe for about 10 years now!! This week when I make it I am gonna dice up some bacon and cook my onions in the bacon grease instead of butter and use that to m ake my rue too!!!

I made it with some of the modifications in other reviews- Sauted the onion first, added 1 1/2 t garlic powder & a can of fried onions (1/4 mixed in with green beans & rest combined with crackers) With these changes, its a 5 star from me.

I did x3 for the recipe so I just reduced the amount of onions and it turned out perfect. I made this recipe 2 ways, one with the ritz topping and the other with the French fried onions (prepared the same way). Everyone who was used to the ritz topping was has now been converted to the French onion topping but all agreed that both versions were amazing! I definitely recommend this recipe for anyone wanting a quick and delicious casserole.

I did not have enough sour cream, so I used a half cup sour cream and a half cup ricotta cheese. Additionally, I added a cup of milk. It turned out fabulous! And I don't use canned vegetables, so my green beans were frozen. I cooked it an hour at 375.
