Slow Cooker Roast Beef Recipe
Ingredients
- cup soy sauce
- 1 (1 ounce) package dry onion soup mix
- 3 pounds beef chuck roast
- 2 teaspoons freshly ground black pepper
Directions
- Whisk the soy sauce and soup mix together in a slow cooker until well combined.
- Place the chuck roast into the slow cooker and pour in water until all but the top inch of the roast is covered.
- Sprinkle the ground black pepper evenly over the top of the roast.
- Cover the slow cooker and cook on Low for about 22 hours, or until the meat is tender.

Since I had a sirloin tip roast that certainly wouldn't need 22 hours in the slow cooker, I only cooked it about 7-1/2 hours and it was done perfectly. I set the roast on a bed of cremini mushrooms, used beefy onion soup mix, since that's what I had in the pantry, only 2 T. of soy sauce to avoid this being too salty, a bay leaf, and just a mere cup of water. The house smelled wonderful and the roast was delicious and flavorful with a rich au jus. We're looking forward to having the leftovers as French Dip sandwiches!

Excellent recipe, but it did NOT take 22 hours! I prepared a 3 pound chuck roast using low sodium soy sauce and the soup mix. It was ready in about 6 hours, and it was AMAZING! Fork tender, with mashed potatoes, au jus, and creamed carrots. It was definitely a hit tonight, especially since my aging mom just moved in with me and she said she hadn’t had roast beef in 30 years. I don’t know how true that is, but we will definitely be making this one again. So easy and delicious!

This was such an easy and delicious recipe for my large family. I cooked 6 lbs. of chuck roast in my 7 qt. Crock-Pot. I did not change any of the other ingredient amounts, although I didn’t have a packet of French onion soup mix, so I used a packet of beef onion. I suspect almost any of the Lipton dry soup packets would work. I did use low-sodium soy sauce, as well. I started it at 8:30 in the evening and let it cook until 6:30 the next night, before serving it over mashed potatoes. It was fall-apart tender, and everyone (11 peeps) loved it!

I use a Topside roast & only for 8-10 hrs. I also place it on a bed of sliced onions ( 1 lge brown ) & a lge can ( 400g ) of sliced mushrooms. I also cook it on low but with 90 minutes to go, I turn it up to high. I then give it 30 minutes and add a dumpling mix for the last hour (or until the dumplings cook ). Served in a bowl over mash... Awesome winter feed.

I use beef broth instead of water, I usually add carrots and potatoes. I’ve never cooked it 22 hours, 8-10 maximum on high.

This was delicious! First: 22 hours is absolutely too long . 8 hours on low was more than sufficient. It was falling apart and so tender. I also used the regular soy sauce but added a few potatoes and they pulled the salt. Make sure not to eat them because they are really salty. Next time I'll use low sodium soy. Also I added a tablespoon of minced garlic.

I have been making this one for years, but I put my carrots, potatoes and cabbage with it and it's even better. I put celery in it before I add the roast, so it is sitting on them.

Tasted great! Seasoned and floured 3 lb pot roast and cooked on stove top. Cooked on low 4 hours. Added carrots, potato, onions and mushrooms last 30 minutes. Used low sodium soy sauce and beefy onion soup mix. Because I floured the roast before searing it so it made into a creamy gravy as it cooked. Was absolutely delicious . Not salty at all.

Easy, quick, and good! I pulled the roast straight from the freezer to the slow cooker and cooked for 10 hours. I would have liked it just a little more tender, but I think if I had time to thaw it it would have been. I added an onion, chopped carrots, and baby potatoes on top while it cooked and had the entire meal ready when we got home from work! The veggies had a great flavor also.

Tasty! Did a bit less than the amount of soy sauce , used low sodium. Beefy onion soup mix, cooked from frozen on high for about 6 hours, then low for 2 more- came out great. Added some frozen carrots about half way through and made gravy with some of the liquid by adding corn starch and cold water. I'll definitely make this again, but can't imagine 22 hours cook time- seems way too long.

So delicious and super easy! I added a box of unsalted beef stock and 3 whole cloves of garlic. Cooked on low for 12 hours for a 3-1/2 pound rump roast. Tender tender tender. Added quartered potatoes last couple of hours. The juice made a yummy au jus.

I wanna see a picture of a chuck roast that slow-cooked for 22 hours. I’m not being snarky, I’m really serious I’m making one right now with 1 can cream of mushroom and one can of beef gravy. Plan on cooking it on low for 7-8. Hours,( I think it’s 3 pounds. I browned the roast first and then scraped the pan into the slow cooker.

We have been making this super easy recipe for years and it's a winner every time. My grandson loves it and wants it every time he comes home from college. We generally make 5-7 lbs each time.

My roast weighed a mere 1.85 lbs. I used 1 tbsp soy sauce, 1 tsp black pepper, and 1/2 pkg dry onion soup mix. I placed the roast on a bed of button mushrooms, and added 1 1/4 cup low sodium beef broth. I cooked on low for 8 hours - my husband said Yum!”

I have made something like this before- don't need 22 hrs. for a 3 lb. roast. But this is Not roast beef- it's pot roast- Roast beef is roasted not braised and is usually cooked to medium rare
