Easy Red Beans and Rice Recipe

Ingredients

This recipe yields 8 servings.

  • 2 cups water
  • 1 cup uncooked rice
  • 1 (16 ounce) package turkey kielbasa, cut diagonally into 1/4 inch slices
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 clove garlic, chopped
  • 2 (15 ounce) cans canned kidney beans, drained
  • 1 (16 ounce) can whole peeled tomatoes, chopped
  • teaspoon dried oregano
  • teaspoon pepper
  • Salt to taste

Directions

Step 1: Gather all the ingredients.

Step 2: Prepare the rice. Bring water to a boil in a saucepan. Add rice, stir, and then reduce the heat to low. Cover and let it simmer for 20 minutes.

Step 3: While the rice is cooking, heat a large skillet over low heat. Add the turkey kielbasa and cook for 5 minutes.

Step 4: Add the chopped onion, green bell pepper, and garlic to the skillet. Saut for a few minutes until the vegetables are tender.

Step 5: Stir in the drained kidney beans and the chopped tomatoes (with juice). Season the mixture with dried oregano, pepper, and salt to taste.

Step 6: Let the mixture simmer uncovered for 20 minutes, stirring occasionally.

Step 7: Once everything is cooked, serve the sausage and bean mixture over the rice.

YUM. I love this, I skipped the sausage, so I sauted the onion & garlic (two cloves) in a tsp. of olive oil. I also used brown rice, cajun-seasoned diced tomatoes and added about 2 Tbsp. of fresh chopped parsley. Very light & healthy, thanks Paula!

Turned out very well. I baked the rice in a covered dish in the oven for 45 minutes at 350 while I was cooking so I didn't have to worry about it. Also substituted andouille sausage to make it more authentic. And I was able to find some Bush's brand small red beans that were "New Orleans" spiced that added some spiciness. Real red beans and rice isn't made with kidney beans, they're made with a smaller red bean and these Bush's beans were the real thing. Also skipped the oregano and added a few bay leaves while it was simmering. So I guess, overall, this recipe was just a guideline. ;-)

I used 1.5 pounds kielbasa and two bell peppers; I sauteed the meat and veggies for about 8 mins then added 2 cups uncooked rice, canned tomatoes plus their juice, drained kidney beans and about 3 cups of water and let the whole thing simmer for about 15 mins until rice was done. For seasoning, I added 1.5 teaspoons garlic powder (omitting garlic clove), 1.5 teaspoons oregano, 1.5 teaspoons beef boullion and 2 teaspoons Cajun seasoning. I served it to rave reviews with sour cream and cheddar biscuits, I will make again!

This is decidedly not authentic. However, I chose this recipe because it was easy and called for ingredients I already had on hand. I rinsed my beans first. I deglazed the pan with red blend wine after adding the veggies, I used 1/4 tsp ground cayenne and 1/4 tsp ground red pepper as well as a good dose of freshly ground black pepper, then added about 1/4 tsp cocoa powder for extra smokiness. Very tasty!

Made the recipe as listed but used actual andouille sausage. Also added a generous pinch of cayanne pepper and about a 1/2 tsp of adobo paste. Also smashed the beans and veggies a little bit before adding the sausage back in. Also, the longer you let it simmer, the better it gets. Good recipe, will make it again. Now where's my omeprazole?

This is always a staple recipe that I follow to make at our house. I always add some bay leaves, Cajun seasoning, and some broth. Always does the trick. Another tip I like to do sometimes is pull some of the beans out and mash with a fork and add back to the pot for a creamier red beans and rice.

It's not traditional red beans and rice, but it's quick and tasty. I added Tony's cajun seasoning as well; just sprinkled it in to taste. And I used the 90 second Uncle Ben's microwave brown rice. My daughter loves it, and it's quick and easy. So we'll make it again. We're not purists.

I found this recipe here years ago, and liked it. Since then, it has consistently been a beloved part of my family's regular meal rotation- and this is just about the highest honor I can give. I decided it deserves a rating. My only consistent change is that I *always* add cumin. Other than that, I might add other spices or not (try chili powder or smoked paprika), and I use whatever color of bell pepper I have on hand (and might use more than called for if I feel like it). Essentially however, this recipe is fantastic as written. This is a high bar in my family- cheap, nutritious, easy enough for almost any night, and it satisfies our differing preferences (even for my vegetarian- I just cook the sausage separately and the rest of us add it to our bowls). Major props.

I’m never making red beans and rice from a box again!! I followed some of the ideas from other reviewers and this turned out great!! My tweaks: no tomatoes, added New Orleans seasoning, cumin, and smoked paprika! YUMMY!!

I added a good dose of Tony Catcher's seasoning and a couple shakes of hot sauce. I used Andoille sausage and mixed the rice in for the final simmer. We absolutely loved it and will definitely make it again. Great recipe.

I made this with Yves Mediterranean Harissa Veggie Sausages (spicy), 2 tsp. Club House Cajun seasonings and 1/8th tsp. Frank’s Red Hot Sauce instead of Italian Seasoning.. It made enough for 4 people and was spicy delicious! Served it with Seeds of Change Brown Rice & Quinoa with Garlic for a garlicky great meal.

The only changes I made was I replaced the whole tomatoes with 2 cans of diced tomatoes (similar to Rotel) and the white rice with whole grain. Everything else stayed the same. Will be a part of my winter meal ideas

I substituted red bell peppers because I hate green bell peppers and I didn’t have any kielbasa sausage so I substituted it for a chicken, Chardonnay and apple sausage instead. For the rice, I decided to cook it in chicken broth and add a tablespoon of butter for extra flavor. The rice was very good just by itself but with the red bean and sausage mixture on top it was really good. I decided to double the recipe for my family of 5 so that we would have extras for lunches/leftovers. The recipe x1 would be plenty to feed my family of 5 with probably a little bit leftover for a dinner 1 night but like I mentioned before, I decided to double the recipe so that we had lots of extra.

I’ll make this again, because it’s filling. I used 10Minute rice instead and next time I will add a bit more salt to the rice. I held back on the oregano. Didn’t miss it.
