Sea Bass With Pineapple-Dijon Cream Sauce Recipe

Sea Bass with Pineapple Cream Sauce
Ingredients:
- 2 (8 ounce) sea bass fillets
- 1 pinch seafood seasoning (such as Old Bay), or to taste
- 1 tablespoon olive oil, or as needed
- Sauce:
- 6 ounces pineapple juice
- cup dry white wine
- cup chicken stock
- 8 ounces heavy cream
- 1 teaspoon Dijon mustard
- 2 tablespoons unsalted butter
Directions:
- Preheat the oven to 425F (220C).
- Pat the sea bass fillets dry with paper towels, then lightly season with seafood seasoning.
- Coat an ovenproof skillet with olive oil and heat over medium-high heat until the oil begins to shimmer, about 1 minute.
- Place the seasoned fish in the hot skillet and cook for 4-5 minutes, or until lightly browned on one side.
- Flip the fish and transfer the skillet to the preheated oven. Roast for 7-9 minutes, or until the fish flakes easily with a fork.
- Once cooked, transfer the fish to a plate and cover with aluminum foil to keep warm.
- Drain any excess oil from the skillet and return it to the stovetop over medium-high heat.
- Pour in the pineapple juice, scraping the bottom of the pan to release any browned bits.
- Add the white wine, chicken stock, and heavy cream. Simmer for 1-3 minutes, or until the sauce thickens to your desired consistency.
- Remove the skillet from the heat and stir in the Dijon mustard and butter. Whisk until the butter is fully melted and the sauce is smooth.
- Serve the sauce over the roasted sea bass and enjoy!
