Sea Bass With Pineapple-Dijon Cream Sauce Recipe

Sea Bass With Pineapple-Dijon Cream Sauce Recipe

Cook Time: 15 minutes

Sea Bass with Pineapple Cream Sauce

Ingredients:

  • 2 (8 ounce) sea bass fillets
  • 1 pinch seafood seasoning (such as Old Bay), or to taste
  • 1 tablespoon olive oil, or as needed
  • Sauce:
  • 6 ounces pineapple juice
  • cup dry white wine
  • cup chicken stock
  • 8 ounces heavy cream
  • 1 teaspoon Dijon mustard
  • 2 tablespoons unsalted butter

Directions:

  1. Preheat the oven to 425F (220C).
  2. Pat the sea bass fillets dry with paper towels, then lightly season with seafood seasoning.
  3. Coat an ovenproof skillet with olive oil and heat over medium-high heat until the oil begins to shimmer, about 1 minute.
  4. Place the seasoned fish in the hot skillet and cook for 4-5 minutes, or until lightly browned on one side.
  5. Flip the fish and transfer the skillet to the preheated oven. Roast for 7-9 minutes, or until the fish flakes easily with a fork.
  6. Once cooked, transfer the fish to a plate and cover with aluminum foil to keep warm.
  7. Drain any excess oil from the skillet and return it to the stovetop over medium-high heat.
  8. Pour in the pineapple juice, scraping the bottom of the pan to release any browned bits.
  9. Add the white wine, chicken stock, and heavy cream. Simmer for 1-3 minutes, or until the sauce thickens to your desired consistency.
  10. Remove the skillet from the heat and stir in the Dijon mustard and butter. Whisk until the butter is fully melted and the sauce is smooth.
  11. Serve the sauce over the roasted sea bass and enjoy!
