  • 4 cloves garlic
  • 2 cups packed fresh basil leaves
  • cup pine nuts
  • cup extra-virgin olive oil
  • cup freshly grated Parmesan cheese
  • 1 tablespoons fresh lemon juice
  • teaspoon red pepper flakes
  • 6 (6 ounce) flat iron steaks
  • 2 large cloves garlic, minced
  • Salt and pepper to taste

Directions

Follow these simple steps to prepare your delicious grilled flat iron steaks with pesto:

  1. Chop the garlic cloves in a food processor until finely minced.
  2. Add the basil leaves and pine nuts to the processor and pulse a few times to combine.
  3. While the food processor is running, slowly pour in the olive oil, stopping once or twice to scrape down the sides.
  4. Once the mixture is smooth, add the Parmesan cheese, lemon juice, and red pepper flakes. Pulse until fully blended.
  5. Season the pesto with salt and pepper to taste. Set aside.
  6. Preheat an outdoor grill to medium-high heat and lightly oil the grate.
  7. Rub the steaks with minced garlic and season them generously with salt and pepper.
  8. Place the steaks on the preheated grill and cook to your desired level of doneness. For medium, grill for about 4 minutes per side.
  9. While grilling, baste the steaks occasionally with a little of the pesto sauce to infuse extra flavor.
  10. Once cooked to perfection, serve the steaks topped with the remaining pesto sauce. Enjoy!
