Lemon Basil Pesto Flat Iron Steak Recipe

- 4 cloves garlic
- 2 cups packed fresh basil leaves
- cup pine nuts
- cup extra-virgin olive oil
- cup freshly grated Parmesan cheese
- 1 tablespoons fresh lemon juice
- teaspoon red pepper flakes
- 6 (6 ounce) flat iron steaks
- 2 large cloves garlic, minced
- Salt and pepper to taste
Directions
Follow these simple steps to prepare your delicious grilled flat iron steaks with pesto:
- Chop the garlic cloves in a food processor until finely minced.
- Add the basil leaves and pine nuts to the processor and pulse a few times to combine.
- While the food processor is running, slowly pour in the olive oil, stopping once or twice to scrape down the sides.
- Once the mixture is smooth, add the Parmesan cheese, lemon juice, and red pepper flakes. Pulse until fully blended.
- Season the pesto with salt and pepper to taste. Set aside.
- Preheat an outdoor grill to medium-high heat and lightly oil the grate.
- Rub the steaks with minced garlic and season them generously with salt and pepper.
- Place the steaks on the preheated grill and cook to your desired level of doneness. For medium, grill for about 4 minutes per side.
- While grilling, baste the steaks occasionally with a little of the pesto sauce to infuse extra flavor.
- Once cooked to perfection, serve the steaks topped with the remaining pesto sauce. Enjoy!
