Italian White Bean Chicken Recipe
Recipe for Chicken with Zucchini, White Beans, and Basil
Ingredients
- 1 clove garlic, sliced
- 2 skinless, boneless chicken breast halves
- 2 zucchinis, sliced
- 1 (15.5 ounce) can white beans, drained
- 1 roma tomato, chopped
- 5 fresh basil leaves
- Ground black pepper, to taste
Directions
Step 1: Prepare a skillet by spraying it with cooking spray. Heat over medium heat.
Step 2: Add the sliced garlic to the skillet and cook until browned, about 1-2 minutes.
Step 3: Place the chicken breasts in the skillet. Cook each side for about 3 minutes or until slightly browned.
Step 4: Stir in the sliced zucchinis and white beans. Cover the skillet and cook for approximately 5 minutes, until the zucchini is tender.
Step 5: Sprinkle the chopped roma tomato over the dish. Cover the skillet again and cook for another 2 minutes.
Step 6: Add the fresh basil leaves to the skillet and cook for an additional minute.
Step 7: Season with ground black pepper to taste and serve immediately.

I followed the recipe exactly, but substituted fresh zucchini with frozen ones since I didn't have any. The dish turned out tasty and we finished it all. However, it lacked a bit of flavor. Not draining the beans was a mistake on my part, so next time I'll remember to do so and also use chicken broth to enhance the taste.
