Chicken and Shrimp Recipe

Ingredients

This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.

  • 5 tablespoons olive oil, divided
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 pound large shrimp, peeled and deveined
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 3 tablespoons all-purpose flour, divided
  • 1 teaspoons salt, divided
  • 4 skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 1 cups water
  • cup dry white wine
  • Freshly ground black pepper to taste

Directions

Step 1: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add sliced mushrooms and saut until they become golden brown. Remove from the skillet using a slotted spoon and set aside.

Step 2: Add another 2 tablespoons of olive oil to the skillet. Saut shrimp, chopped onion, and garlic in the hot oil until the shrimp become opaque. Remove the mixture from the skillet and add it to the mushrooms.

Step 3: In a shallow dish or bowl, mix 2 tablespoons of flour and teaspoon of salt. Dredge the chicken pieces in this flour mixture to coat them evenly.

Step 4: Add 1 tablespoon of olive oil to the skillet. Saut the coated chicken pieces in the hot oil until they are no longer pink in the center, about 3 to 5 minutes. Once cooked, add the chicken to the mushroom and shrimp mixture.

Step 5: In the same skillet, heat the remaining 1 tablespoon of olive oil. Stir in the remaining 1 tablespoon of flour and cook for about 30 seconds, stirring constantly, until the mixture turns brown.

Step 6: Gradually stir in the water, dry white wine, and the remaining teaspoon of salt. Bring the mixture to a boil and cook for 1 minute to allow it to thicken slightly.

Step 7: Reduce the heat to medium-low and return the mushroom, shrimp, and chicken mixture to the skillet. Simmer for about 10 minutes to combine the flavors. Season with freshly ground black pepper to taste before serving.

I enhanced the dish by incorporating extra garlic and a hint of cayenne pepper and red pepper flakes. Since I didn't have any wine on hand, I opted for chicken broth and a touch of red wine vinegar instead. I served it over bow tie noodles, and the result was absolutely delicious!

The dish turned out decent. I opted for butter over oil when sautéing onions, shrimp, and mushrooms. I also used butter to create the roux. To the flour mixture, I incorporated salt, pepper, and paprika. Additionally, I seasoned the sauce with salt, pepper, and Parmesan cheese.

We absolutely loved this recipe. Although it has several steps, the final outcome is definitely worth the extra effort. I plated it over angel hair pasta, opting for chicken broth instead of water, doubling the garlic, and adding lemon pepper for an extra kick of flavor. Finished off with a generous sprinkle of freshly grated parmesan cheese. This pasta dish turned out absolutely fantastic prepared in this manner.
