Roasted Garlic-Parmesan Fingerling Potatoes Recipe
Ingredients
- 1 pound fingerling potatoes, halved lengthwise
- 2 cloves garlic, minced
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon lemon zest
- teaspoon salt
- teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 tablespoons chopped fresh parsley
Directions
Step 1: Gather all the ingredients and preheat your oven to 425F (220C).
Step 2: In a large bowl, toss the fingerling potatoes with minced garlic, grated Parmesan cheese, lemon zest, salt, and freshly ground black pepper.
Step 3: Drizzle the mixture with olive oil and toss again until everything is evenly coated.
Step 4: Heat a cast-iron skillet over medium-high heat. Add butter and allow it to melt completely.
Step 5: Add the seasoned potatoes to the skillet, cooking for about 2 minutes while tossing gently to ensure they are coated with butter.
Step 6: Transfer the skillet to the preheated oven. Roast the potatoes for 15-20 minutes, stirring halfway through, until they are soft and golden.
Step 7: Remove from the oven and sprinkle the roasted potatoes with fresh parsley for a burst of color and flavor.

I used three cloves of garlic instead of two and skipped the butter. I skipped the lemon and put a tiny bit of lemon pepper instead. I skipped the stove-top cooking. Instead, I put them straight in the oven at 400 degrees F for 20 minutes. I added a little garlic powder and granulated onion. They came out perfect!

Easy and yummy. Whole family loved them. I didn't bother searing in pay before putting in oven. Just melted butter, poured it in bowl over potatoes and transferred to cookie sheet.

These were absolutely delicious! I didn't have fresh garlic so I used a little garlic powder and left out the lemon zest because I didn't have it. Rather than beginning on the stove top in butter, (minus the potatoes), I placed everything including the butter in a large glass bowl and nuked it in the microwave until butter melted. Gave it a quick stir to combine everything and tossed the potatoes in the mixture. Baked as directed. We like the flavor that a little additional butter at the end gives so I always drizzle potatoes with some warm melted butter immediately after removing from the oven, followed by a light dusting of additional parmesan cheese. So good!

This recipe was fantastic. Made it as is and yielded perfectly crispy potatoes. I will try them with yukon gold using the same method but honestly they are totally worth it! Beware of the salt. If your parmesan is on the saltier than usual side, reduce the amount of salt a bit.

Delish. I used extra oil and omitted the butter. I also did the whole thing in a sheet pan because I doubled the recipe and my cast iron wasn't big enough. I tossed in a liberal amount of dried Thyme before roasting.

I love Parmesan cheese and garlic. I added 1 Tbsp more cheese and minced 1 more clove of garlic, the flavors came through even more

Worked great. Added some chopped onions, also used broiler for 7 minutes at end to crisp a little.

These are delicious. I used all the ingredients listed but just baked them on a sheet pan for about 25 minutes. They turned out great. I'll definitely make these again!

SO delicious. The only issue I ran into was that I didn't have fingerlings, so I obviously couldn't use halved-fingerlings. Instead, I grabbed the smallest russets I could find and used a grater to slice them thinly. Worked just as well, I'm assuming, and tasted great. My parents and siblings loved them!

This is a really good starting point recipe for a variety of seasonings! Whenever I stovetop or oven cook potatoes, I always microwave for about 5 minutes or more beforehand. This speeds up the actual cooking time , and makes a creamy centered tater.

I'm caring for my 90 year old grandparents right now, and they're overstocked with potatoes and I'm trying a bunch of new recipes so they don't get bored. This was a HUGE hit for my grandpa, he had seconds and didn't add anything to them(he likes to add salt to everything)safe to say I'll be making these again.
