Air-Fryer Roasted Veggies Recipe
Ingredients
- cup diced zucchini
- cup diced summer squash
- cup diced mushrooms
- cup diced cauliflower
- cup diced asparagus
- cup diced sweet red pepper
- 2 teaspoons vegetable oil
- teaspoon salt
- teaspoon ground black pepper
- teaspoon seasoning of choice (or more to taste)
Directions
- Gather all ingredients and prepare them for cooking.
- Preheat the air fryer to 360F (180C).
- In a large bowl, combine the zucchini, squash, mushrooms, cauliflower, asparagus, red pepper, vegetable oil, salt, pepper, and your chosen seasoning. Toss to coat all the vegetables evenly.
- Arrange the seasoned vegetables in a single layer in the fryer basket, ensuring they are spread out for even cooking.
- Cook the vegetables in the preheated air fryer, stirring halfway through the cooking time. Continue until the vegetables are tender and crisp, about 10 minutes.
- Once cooked, remove from the air fryer, serve immediately, and enjoy your crispy vegetable medley!
Four Seasoning Ideas
- Italian seasoning
- Herbes de Provence
- Smoked paprika
- Gremolata: cup chopped fresh parsley, 2 teaspoons lemon zest, and 2 cloves minced garlic
Recipe Tip
If you are using firmer vegetables such as new potatoes, carrots, turnips, parsnips, winter squash, celeriac, or sweet potatoes, increase the cooking time to 15 minutes. Be sure to stir every 5 minutes for even cooking.

I absolutely adore using the air fryer for cooking vegetables. This recipe is incredibly versatile. One tip I have is if you're using root vegetables, I recommend cooking them separately or at least starting them for the first 5 minutes on their own as they require a longer cooking time.

I wish I could upload a picture, but the size adjustment feature is not working. I cooked an 8-serving portion for 20 minutes, shaking it every 5 minutes. Next time, I would use less pepper and more salt. I also included minced garlic with my vegetables - summer squash, mushrooms, sweet peppers, and red onions.

I extended the air fryer cooking time to approximately 12-13 minutes.

I made this dish using only yellow squash and zucchini, and substituted an Italian herb mix. It turned out fantastic! Thank you for the incredible recipe!!!!
