Pressure Cooker Goat Curry Recipe

  • cup vegetable oil, divided
  • 2 large onions, thinly sliced
  • 2 large tomatoes, peeled and diced
  • 2 tablespoons garlic paste
  • 1 tablespoon ginger paste
  • 2 pounds goat meat, cubed
  • 1 cup water
  • 1 potato, cubed
  • 1 large carrot, sliced
  • 2 teaspoons garam masala
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • teaspoon ground turmeric
  • 2 teaspoons salt, or to taste
  • teaspoon ground red chile pepper

Directions

Follow these steps for a perfectly cooked goat meat curry in an electric pressure cooker:

  1. Heat 2 tablespoons of vegetable oil in the electric pressure cooker on the "Sear" setting. Add the onions and cook, stirring occasionally, until golden brown, about 10 to 15 minutes.
  2. Transfer the cooked onions to a food processor and blend into a smooth paste. Set aside in a bowl.
  3. In the same food processor, combine the peeled and diced tomatoes, garlic paste, and ginger paste. Process until smooth.
  4. Heat the remaining 2 tablespoons of vegetable oil in the pressure cooker on the "Sear" setting. Add the onion paste and cook, stirring constantly, until the paste becomes brown and fragrant, about 2 minutes.
  5. Stir in the smooth tomato mixture and let it cook for another 2 minutes, allowing the flavors to meld together.
  6. Now, add the cubed goat meat, water, cubed potato, sliced carrot, garam masala, ground coriander, ground cumin, ground turmeric, salt, and ground red chile pepper into the pressure cooker. Stir to combine all ingredients thoroughly.
  7. Close the pressure cooker lid and seal it according to the manufacturer's instructions. Set the cooker to high pressure for 50 minutes.
  8. Once the cooking time is up, use the natural-release method to release the pressure, following the manufacturer's instructions.
  9. After the pressure has been fully released, open the lid and give the curry a final stir. Your goat meat curry is ready to be served!

I was really looking forward to trying out this recipe. I adjusted it to make 6 servings and followed the instructions exactly, making it in my Instant Pot. The aroma while cooking was fantastic, but I found the flavors to be a bit underwhelming in the end result. It seemed a bit diluted, which was unexpected.
