Instant Pot Lasagna Recipe

Ingredients

  • 2 teaspoons olive oil
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 (6 ounce) package no-boil lasagna noodles, broken into large pieces
  • 1 cups marinara sauce, or to taste
  • 2 cups fresh spinach
  • 1 (8 ounce) package shredded mozzarella cheese
  • 1 (8 ounce) package soft goat cheese

Directions

  1. Turn on a multi-cooker (such as Instant Pot) and select the Saute function. Heat the olive oil in the pot.
  2. Add ground beef and salt, cooking and breaking it up with a spatula until thoroughly browned, about 6 minutes. Transfer the beef to a bowl and set aside.
  3. Wash the pot and return it to the multi-cooker. Pour 1 cups of water into the pot and set the metal trivet inside.
  4. Arrange lasagna noodles over the bottom of a 6-inch springform pan. Ladle 1/3 of the marinara sauce over the noodles.
  5. Add 1/3 of the cooked beef and top with 1/3 of the fresh spinach. Add half of the mozzarella cheese on top.
  6. Repeat the layering: add another 1/3 of the beef, spinach, and marinara sauce. Then, add half of the goat cheese.
  7. Finish the layers by adding the remaining mozzarella and goat cheese on top.
  8. Cover the top loosely with aluminum foil. Carefully lower the springform pan onto the trivet in the pot.
  9. Close and lock the lid. Set the multi-cooker to high pressure and cook for 20 minutes. Allow 10-15 minutes for pressure to build.
  10. Once the cooking time is complete, release the pressure using the natural-release method, which may take 10-40 minutes, following the manufacturer's instructions.
  11. Unlock and remove the lid. Preheat the broiler and set the oven rack about 6 inches from the heat source.
  12. Carefully transfer the springform pan onto a baking sheet and broil the lasagna for about 5 minutes, or until the cheese on top is lightly browned and bubbling.

Recipe Tip

You can use regular lasagna noodles instead of the no-boil type if desired.

I prepared my dish in a round ovenproof bowl by browning the meat separately and draining off any excess fat with filtered water. I then mixed in 1/2 teaspoon of Italian seasoning. For the filling, I used extra mozzarella, ricotta, cottage cheese, and spinach. I made a foil sling to lower the bowl into the pot on top of the trivet. After using the Instant Pot, I topped the dish with a full layer of mozzarella and broiled it for 5 to 8 minutes until golden brown. I sliced it into wedges and served it, finding it absolutely delicious. Next time, I plan to pre-make and freeze it for even more convenience.

We absolutely adored this dish! It was so simple to make and incredibly tasty. The tangy goat cheese added the perfect touch. While we felt the noodles were slightly undercooked, here are the adjustments we made: Cook for 30 minutes. Additionally, combine 1 1/2 cups of spicy Arrabiata pasta sauce with the browned meat. Ensure there is extra sauce on each layer. Opt for a full 5 or 6-ounce bag of baby spinach, roughly chopped. Broil for 4 minutes. We will definitely be preparing this again.

Review: 10/10 Absolutely loved it! My husband did too. It was simple, quick, and even better the next day! I would recommend using less sauce next time. I made the No Noodle Zucchini version in a small casserole dish. I made sure to drain the excess moisture from the zucchini several times, and it turned out wonderful! Thank you, Diane!

I have to say, while it was decent, it didn't really stand out. It's just me and one other person at home, so I prefer cooking smaller recipes. I already have a go-to recipe for two servings that is much simpler and faster to prepare.
