Seafood Boil Recipe

Ingredients:
- 4 lemons, halved
- 2 medium sweet onions (such as Vidalia), quartered
- 4 serrano chiles, split in lengthwise and seeds and membranes removed
- 2 heads garlic, peeled and halved
- 2 bunches fresh thyme, tied with string
- 1 cups seafood seasoning (such as Old Bay), or more to taste
- 6 teaspoons kosher salt, or more to taste
- 6 bay leaves
- 3 pounds medium red potatoes, sliced in half
- 5 (13 ounce) packages smoked kielbasa sausage, cut into 2-inch pieces
- 6 ears sweet corn, halved
- 30 littleneck clams, scrubbed
- 4 pounds jumbo shrimp, deveined, tail on
- 2 pounds Alaskan king crab legs
Directions:
- Fill a very large stockpot fitted with a basket insert with about 8 quarts of water, or about halfway full.
- Squeeze the lemons into the water and toss the halves in as well. Add onions, chiles, garlic, thyme, seafood seasoning, kosher salt, and bay leaves.
- Bring to a boil over medium-high heat. Once boiling, reduce the heat and let it simmer for 10 minutes.
- Add the sliced potatoes into the pot and simmer for another 15 to 20 minutes.
- Next, add the sausage and corn, making sure everything stays covered with the liquid. Cook for 5 minutes.
- Add the clams to the pot and boil until they open, which should take about 8 minutes.
- Once the clams are open, toss in the shrimp and turn off the heat. Cover the pot and let the shrimp steep in the flavor for 10 minutes.
- In the last 5 minutes, add the crab legs, pressing them into the liquid to absorb the flavors.
- Drain the seafood and vegetables, then spread the crab, shrimp, sausage, clams, corn, potatoes, and onions out on a newspaper-covered table or on large serving trays.
- Sprinkle with additional Old Bay seasoning or serve it on the side for individual use.
Cook's Note:
- The broth should have a strong salty and spicy flavor. Taste it and add more Old Bay or kosher salt if needed, as the broth will infuse the potatoes and sausage with flavor.
- Dont skimp on the littleneck clams they add great flavor and have a pleasant taste. Buy them fresh on the day of use and store them open in a bowl of ice.
- Some of the boiling liquid can be saved to pour over the shrimp as you eat.
- Serve with cold beer and plenty of napkins!

Great recipe! We used a large pot with a strainer. Instead of king crab, we often substitute snow crab and sometimes add 4oz lobster tails. When serving, we put everything in seafood boil bags with a cup of broth, half a stick of melted butter, and at least two tablespoons of Old Bay Seasoning, as well as some hot sauce to taste. We also tried another reviewer's suggestion of blending onions, garlic, and serrano chilies with clarified butter and Old Bay Seasoning as a dipping sauce - delicious!

Great recipe that is quite simple to make. The crab was excellent, easy to separate the meat without any hassle. However, the shrimp turned out rubbery as it was overcooked. I scaled down the recipe and will add more seasoning next time. Still, I will definitely make this dish again.
