Roasted Rack of Lamb Recipe

Ingredients
- cup fresh bread crumbs
- 2 tablespoons minced garlic
- 2 tablespoons chopped fresh rosemary
- 1 teaspoon salt

- 1 (7-bone) rack of lamb, trimmed and frenched
- 1 tablespoon Dijon mustard
Directions
Step 1: Gather all the ingredients youll need for the recipe.
Step 2: Preheat your oven to 450F (230C). Move the oven rack to the center position for even cooking.
Step 3: In a small bowl, combine the bread crumbs, minced garlic, rosemary, salt, and black pepper. Stir in 2 tablespoons of olive oil to moisten the mixture. Set aside.
Step 4: Season the rack of lamb all over with 1 teaspoon of salt and 1 teaspoon of black pepper.
Step 5: Heat 2 tablespoons of olive oil in a large oven-proof skillet over high heat. Once hot, add the lamb and sear it on all sides for about 1 to 2 minutes until nicely browned. Remove the lamb and set it aside for a few minutes.
Step 6: Brush the seared lamb with Dijon mustard, then roll it in the prepared bread crumb mixture, pressing down gently to ensure an even coating. Cover the ends of the bones with aluminum foil to prevent them from burning.
Step 7: Return the breaded rack of lamb to the skillet, bone-side down. Roast in the preheated oven for 12 to 18 minutes for medium doneness. Use an instant-read thermometer to check the internal temperature: it should read at least 130F (54C) for medium.
Step 8: Once the lamb reaches your desired doneness, remove it from the skillet and let it rest for 5 to 7 minutes, loosely covered with foil. This resting period helps the juices redistribute for a tender, flavorful result.
Step 9: Carve the lamb between the ribs and serve.

I used a petite rack of lamb from Costco, 8 ribs though. I agree with the many others who say the salt could be cut, but not eliminated, say by half. I let the meat rest out of the fridge for about an hour before starting the recipe, those who needed to cook the rack longer than the recipe states either have their oven too low (get it calibrated) or started with the meat too cold. Anyway, after 12 minutes in the oven it was perfectly medium rare in the middle and medium/medium well on the end cuts. It was incredibly easy as well, what more could you ask from a recipe that would impress the Queen?

This was AMAZING!! A few tweaks. When seared the lamb (2.5lbs) I added 1 tbsp of butter to avocado oil ( I use this instead of EVOO) and 2 tsp of minced garlic . When garlic turned brown I added the lamb seared on all sides then removed the cast iron skillet from the heat. To the bread crumbs, I added 1/2 tsp of garlic powder, 1 tsp of onion powder, 1 Tbsp of fresh minced rosemary and 1 tbsp dried rosemary, 2 tsp of basil. I added the rendering from the skillet to the breadcrumbs , mixed well, coated the lamb with Dijon mustard, then the breadcrumbs. Placed in 400 degree oven for 35 minutes. PERFECT!!! LAMB was rare to mid rare. (new Zealand lamb vs Colorado lamb. (There was a fat cap on the lamb)

Very simple and really delicious. I sautéed shallots before browning. Also when it was almost done I deglazed the pan with some good red wine. I removed the lamb and added one tablespoon of butter. In my top 5 favorites

My husband and I eat rack of lamb on a regular basis. I buy it at Costco and it is always very good. I found this recipe today and it was OVER THE TOP delicious. I used panko bread crumbs and didn't add any salt but otherwise made no changes. Cooked 20 minutes at 425 (I had veggies roasting) and let rest for 5 minutes. A few minutes less would have been better as we like ours medium rare but the lamb was moist, the bread crumbs were crunchy and they tasted as good as they could have. I will definitely make these again.

I like to mix fresh garlic, rosemary, salt, pepper, a bit of jalapeño, Dijon, bread and olive oil in a small food processor making a thick paste which I spread evenly over a nicely browned rack of lamb then roasting at 450 F for 15 - 20 minutes (exposed bone wrapped in foil). Quite amazing. Simple but Michelin star!

Same as everyone else - cook twice as long. Go a little easier on salt. Guests said it was the best MEAL, not best lamb meal, they'd ever eaten and they eat food with expensive chefs all over the world! I was proud to give them such a great experience.

Excellent recipe we all enjoyed the taste and flavor. Reduced the salt as well and still fine the fresh garlic had sprouted so used the minced garlic. However the cook time we had to double and the rest the meat for 10 minutes to bring the center section upto temperature

This recipe is terrific. I made it and it was wonderful. I would, however, eliminate adding the salt to the bread crumb mixture. After reading other reviewers, I halved the salt, but it was still too much for my palate. Given this one a go!

I so wanted to give this a 5 star review and, I guess a bit is on me for not reading the reviews enough. The salt was WAY too much. Cut it in half (or even 1/3) and then this is a five star recipe!

Super easy recipe for my first time cooking lamb! Had everything in my pantry so I definitely loved that. I live at 8,400 ft so I had to cook it for 30 ish minutes at 400° to get it to 130°
