Hamburger Steak with Onions and Gravy Recipe

Ingredients

  • 1 pound ground beef
  • cup bread crumbs
  • 1 egg
  • 1 teaspoon Worcestershire sauce
  • teaspoon seasoned salt
  • teaspoon onion powder
  • teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • 1 tablespoon vegetable oil
  • 1 cup thinly sliced onion
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon cooking sherry

Directions

  1. Gather all the ingredients and set them out in front of you for easy access.
  2. In a large bowl, mix together the ground beef, bread crumbs, egg, Worcestershire sauce, seasoned salt, onion powder, garlic powder, and black pepper. Stir until the mixture is well combined.
  3. Shape the mixture into 8 evenly sized balls, then flatten each one into a patty.
  4. Heat the vegetable oil in a large skillet over medium heat.
  5. Once the oil is hot, add the patties and sliced onion to the skillet. Fry the patties for about 4 minutes per side, or until they are nicely browned. Remove the patties from the skillet and set them aside, keeping them warm.
  6. Sprinkle the flour over the onions and drippings in the skillet. Stir it in with a fork, scraping up any flavorful bits of beef that have stuck to the bottom of the skillet.
  7. Slowly add the beef broth and sherry to the skillet while stirring, creating a smooth gravy. Season with a pinch of seasoned salt to taste. Continue simmering and stirring over medium-low heat for about 5 minutes, or until the gravy thickens.
  8. Once the gravy has thickened, reduce the heat to low. Return the beef patties to the skillet, cover, and simmer for about 15 minutes, or until the patties are fully cooked through.
  9. Serve the Salisbury steaks with the rich, savory gravy and enjoy your delicious homemade meal!

This recipe perfectly captured that nostalgia, and I attempted to recreate that same feeling tonight. I opted to use cornstarch for the gravy instead of flour to replicate the translucent gravy from those TV dinners. I cooked the onions until they were caramelized - sweet, soft, and utterly delicious. After cooking them separately, I fried up the hamburger patties. Though the recipe called for 8 patties, I found that to be too scant and made 6 instead. I followed the recipe's seasoning precisely as I wanted to keep the meal simple, reminiscent of my childhood - nothing extravagant, just tasty and fulfilling. Doubling the gravy (without salt) since I served it with mashed potatoes (and corn, of course) turned out to be a wise choice, and we happily polished off our plates.

I have made this dish twice and I wanted to share my modifications: 1. Instead of regular bread crumbs, I recommend using Italian seasoned bread crumbs for extra flavor. 2. I skip the garlic and onion powder and opt for freshly grated garlic and onion. Grated onion adds moisture, so you may need to adjust the amount of bread crumbs. 3. We are big fans of Worcestershire sauce, so I use about 2 tablespoons instead of 1 teaspoon. 4. I adore onions, so I slice mine into wider petals for added texture. Both times I made this, I used McCormick powdered brown gravy mix as a shortcut since I didn't have the ingredients for homemade gravy. Just coat the onions and pan bits with the powder, then gradually stir in water, bring to a boil, and simmer for 1 minute following the remaining recipe instructions. These are incredibly tasty! I read another review that compared them to the Salisbury steak TV dinners from the 80s, and while they do have a similar vibe, these homemade ones are definitely superior! The slight modification I made was adding brown sugar to my burger mix and adjusting the seasonings to suit my preferences. I've also tried a variation with fresh mushrooms in the gravy. Such a delightful comfort food!
