Albondigas Recipe
Ingredients
- 1 quart water
- 4 carrots, sliced
- 2 small potatoes, peeled and diced
- 1 medium onion, diced
- 1 cups salsa, medium or hot
- 2 beef bouillon cubes
- 1 pounds ground beef
- cup seasoned dry bread crumbs
- cup milk
- 1 tablespoon chopped fresh cilantro
Directions
- In a large stockpot, bring water, carrots, potatoes, onion, salsa, and bouillon cubes to a boil.
- Once boiling, reduce the heat and simmer for 10 minutes, stirring occasionally.
- While the vegetables are cooking, combine ground beef, bread crumbs, and milk in a bowl.
- Shape the mixture into 1-inch meatballs.
- Carefully drop the meatballs into the simmering broth.
- Bring the soup back to a boil, then reduce the heat to medium-low.
- Cover the pot and cook for about 20 minutes, or until the meatballs are no longer pink in the center and the vegetables are tender.
- Garnish with fresh chopped cilantro before serving.

Fantastic recipe! I adjusted it to make a larger batch by following suggestions from other reviewers. I used 8 cups of water along with 2 heaping tablespoons of beef "better than bouillon." To enhance the flavor, I added 3 tablespoons of dried cilantro, 1/4 teaspoon of cayenne pepper, 1/2 teaspoon of garlic powder, and paprika. After bringing it to a boil, I included 1/2 cup of rinsed brown lentils and let it simmer for 40 minutes. Then, I mixed in salsa, carrots, onion, and 1 cup of diced zucchini. After bringing it to a boil again, I let it simmer for an additional 20 minutes. I then added diced potato and 1 pound of semi-thawed, quartered, ready-made frozen sirloin meatballs and continued to simmer for another 20 minutes. To adjust the consistency, I added 2 more cups of water as the soup was still very thick. For the next time, I might reduce the lentils or consider omitting the meat altogether. This recipe will definitely become a regular in our meal rotation!

I tried making this dish for the first time and it turned out amazing! After reading some reviews, I made a few adjustments and added my own touch. Instead of using just water, I used a mixture of water and chicken broth, totaling 6 cups. I included 2 teaspoons of chopped garlic in the soup and added squash to the red potatoes and carrots. Additionally, I incorporated 5 ounces of tomato sauce and one packet of Goya Sazon for extra flavor. For the meatballs, I mixed in onions, chopped cilantro, salt, pepper, and half a teaspoon of paprika. Instead of bread crumbs, I used 1 cup of white rice. To my surprise, my family loved it and actually asked for seconds, which rarely happens.
