Cook Time: 15 minutes

Snow Peas and Carrots Stir-fry

This quick and healthy stir-fry features fresh snow peas and carrots in a savory sesame sauce, perfect as a side dish or light meal.

Ingredients

  • 1 teaspoon soy sauce
  • 1 teaspoon cornstarch
  • Cooking spray
  • 1 teaspoon sesame oil
  • pound snow peas
  • cup thinly sliced carrot
  • cup chicken broth

Directions

  1. In a small bowl, whisk together the soy sauce and cornstarch until the cornstarch is fully dissolved. Set aside.
  2. Prepare a skillet by spraying it with cooking spray. Place it over medium heat and add the sesame oil.
  3. Add the snow peas and sliced carrots to the skillet. Stir-fry for about 2 minutes until the vegetables start to soften.
  4. Pour in the chicken broth and bring to a boil. Once boiling, cover the skillet and reduce the heat to low. Let it simmer for 5 minutes until the vegetables are slightly tender.
  5. Stir in the soy sauce and cornstarch mixture. Continue stir-frying until the sauce thickens, about 2 more minutes.

A decent recipe, but I felt it lacked flavor. I ended up adding extra soy sauce to enhance the taste.

Review rewritten: This dish was quite enjoyable. I followed the recipe as instructed, but I plan on enhancing it next time by incorporating some ginger and garlic into the pan before mixing in the peas and carrots. I also intend to follow Salser713’s suggestion and sprinkle sesame seeds on top when serving. I had no issues blending the soy sauce with cornstarch, unlike jen55. However, it might be more convenient, without altering the flavor, to combine the soy sauce, cornstarch, and broth together and pour them into the pan simultaneously. This can streamline the process into a single step. I will definitely be making this dish again with the modifications mentioned above. It's always great to have straightforward recipes like this on standby.

I truly adore this dish. I concur with others and decided to enhance it by adding ginger, minced garlic, and a dash of garlic powder while cooking. Additionally, I topped it off with a drizzle of soy sauce in my bowl.

I followed another reviewer's suggestion and added extra garlic and ginger to this dish, and threw in some mushrooms I had lying around. It turned out to be a quick, easy, and healthy side dish. I definitely plan on making it again.

Delicious, but doesn't have any Oriental flavor at all.

We really enjoyed this dish. It had a lot of flavor and paired perfectly as a side with our Egg Foo Yung. It has now become a staple in my cooking rotation, so thank you for sharing the recipe.

Followed the recipe as instructed and included a chicken breast. It's a solid starting point, but I plan to incorporate ginger, garlic, and pepper in my next attempt.

I really enjoyed this recipe. I only added 2 cloves of garlic and followed the steps one by one. It turned out just as the recipe called for. It was very simple to make and the vegetable dish was delicious.
