Chicken and Biscuit Casserole

This comforting casserole combines tender chicken, vegetables, and a creamy broth, all topped with golden, flaky biscuits. It's the perfect meal for any night of the week.

Ingredients

  • 1 pound skinless, boneless chicken breasts, cut into small pieces
  • 1 cup sliced carrot
  • cup sliced celery
  • 1 cube chicken bouillon (or more to taste)
  • cup butter
  • cup chopped onion
  • 2 teaspoons minced garlic
  • cup all-purpose flour
  • teaspoon poultry seasoning
  • teaspoon dried basil
  • teaspoon dried thyme
  • teaspoon ground black pepper
  • 1 cups chicken broth
  • cup milk
  • 1 cup frozen peas
  • 1 (16.3 ounce) package refrigerated biscuit dough, separated

Directions

  1. Preheat the oven: Preheat your oven to 350F (175C) and grease a large baking dish.
  2. Prepare the chicken and vegetables: In a large pot, combine the chicken, carrots, celery, and chicken bouillon. Add enough water to cover the ingredients. Bring to a boil, then cover and cook for 10 to 15 minutes, or until the chicken is no longer pink in the center. Drain the mixture, reserving the chicken and broth in a separate pot or bowl.
  3. Cook the onions and garlic: In the same pot, melt the butter over medium heat. Add the chopped onion and minced garlic and cook for 5 minutes, or until softened and fragrant.
  4. Make the sauce: Stir in the flour, poultry seasoning, basil, thyme, and black pepper. Gradually add the reserved chicken broth and milk, stirring constantly to avoid lumps.
  5. Add the chicken and peas: Stir in the peas and the cooked chicken with its broth. Simmer the mixture over medium-low heat for 10 to 15 minutes, or until the sauce thickens.
  6. Assemble the casserole: Pour the thickened chicken mixture into the prepared baking dish. Spread it out evenly.
  7. Bake: Place the dish in the preheated oven and bake for 20 to 25 minutes, or until the mixture is bubbling.
  8. Top with biscuits: Remove the dish from the oven and evenly arrange the biscuit dough on top of the bubbling mixture. Cover the dish and bake for an additional 15 minutes.
  9. Finish baking: Uncover the dish and continue baking for 15 to 20 more minutes, or until the biscuits are golden brown and cooked through.

Cook's Note

This dish can be made ahead of time. After assembling, allow it to cool, then store it in the refrigerator or freezer. When ready to bake, preheat the oven to 350F (175C), bake until slightly bubbly, top with biscuits, cover, and follow the baking instructions.

I made this recipe using Costco rotisserie chicken, so I modified the method since I didn't need to cook the chicken from scratch as per the instructions. Since my Thyme was quite old, I omitted it from the dish. Other than that, I followed the recipe without any alterations. The result was outstanding! The flavor was simply wonderful!

I followed the recipe exactly as written. I used 3 small boneless chicken breasts, but next time I will add 1 or 2 more. Besides that, it turned out perfectly! The leftovers reheated nicely the following day. This dish is definitely going into my regular meal rotation.
