Big Ray's Kielbasa Cabbage Skillet for a Crowd Recipe

Cook Time: 65 minutes

Ingredients:

  • 3 large potatoes, cubed
  • cup butter, divided
  • 2 onions, chopped
  • 1 pound Polish kielbasa sausage, cut into -inch slices
  • 1 large head cabbage, coarsely chopped
  • 2 (15 ounce) cans diced tomatoes
  • cup white sugar
  • 1 tablespoon paprika

Directions:

  1. Place the cubed potatoes in a microwave-safe bowl. Microwave on high for about 8 minutes, or until they are partially tender. Set aside.
  2. In a Dutch oven or large cast-iron skillet, heat 2 tablespoons of butter over medium heat. Add the chopped onions and sliced kielbasa sausage. Cook, stirring occasionally, until the sausage is browned, about 5 minutes. Transfer the sausage and onions to a bowl and set aside.
  3. In the same Dutch oven, add the remaining 2 tablespoons of butter. Add the chopped cabbage and cook, stirring occasionally, until the cabbage is tender, about 5 minutes.
  4. In a separate bowl, combine the diced tomatoes, white sugar, and paprika. Pour the mixture over the cooked cabbage and bring it to a boil.
  5. Once the cabbage mixture reaches a boil, reduce the heat. Add the partially cooked potatoes and the sausage-onion mixture to the Dutch oven. Stir everything together and cover the pot. Let it simmer for about 40 minutes, or until the potatoes are fully tender.

I don't like to review if I don't make as written, but I was looking for a recipe with smoked sausage , cabbage and potatoes, and this was really good. I just couldn't bring myself to add all that sugar. A tablespoon worked fo me. Thanks Big Ray.

Loved this combination of ingredients. I did use much less sugar as suggested by others and added salt and pepper to taste. Also fried up the potatoes until browned and done. This way I could add the cabbage to the pot last and maintain some firmness in the cabbage which I prefer. Turned out awesome.

Recipe is a good choice for a healthy weeknight dinner. I added a touch of salt, and V8 juice which subtly enhanced the flavor.

I liked this recipe pretty well, but, like others, had to drop the sugar to 1 T which was enough to cut the acid in the tomatoes. I continue to have problems with recipes using nonspecific quantities, like "large" potatoes--the big ones at my supermarket are about 16-18 oz, and who can even guess what size a single onion should be. I used about 8-9 heaping c. diced cabbage, 5 c. diced potatoes, and 2 c. diced onions. I also cut the sausage in thinner rounds, closer to 1/4" for a more comfortable bite.

This is a very good base recipe. That’s easy to adapt to what you like. Before I saw this recipe I made a very similar one. I used. Hillshire Farms beef kielbasa and Rotel tomatoes. Because I like things spicy, I used one of the cans with green chilies and the other with habanero peppers. I boiled my potatoes instead of microwaving them. I also added in some carrots, better than bouillon, chicken flavor, garlic powder, onion powder, paprika, Italian seasoning and some red pepper flakes along with a couple dashes of hot sauce and a dash of Worcestershire sauce. Even without the differences and my recipe, this is a very good base recipe.

Made this DELICIOUS comfort food tonight. Followed the recipe except I had polish sausage. My Polish girlfriend taught me to poke holes in the sausage and place in skillet with 1/2 inch of water a boil out the grease for 2-3 minutes. Wiped out the Dutch oven and preceded as directed! Did add much needed pepper. Definitely will make this again!

I make this dish all the time, though I usually have Italian sausage on hand instead of Kielbasa. Just a tblsp of sugar works, and sometimes I leave the tomatoes out. It's a great easy and hearty meal. Season however you like. I use fennel and paprika most often.

Loved. Left out sugar all together, per other reviews. Only had 1 can of diced tomatoes on hand, but was enough. Added about 1 Tbs of minced garlic when cooking the onions. Delicious

I tried it once with the full amount of sugar but found it too much. I like it with a small pot of applesauce instead of the sugar. Reducing the sugar to a tablespoon or two would work too. The first few times I made this, I skipped the step of microwaving the potatoes since they seemed to cook fine during simmering. This time when I made this recipe the potatoes were still hard after 40 minutes or more of cooking. I read that the acidity of the tomatoes prevents the potatoes from cooking , so next time I'll follow the instructions to microwave the potatoes first. This was delicious comfort food and I loved packing leftovers for work lunches.

This was very tasty and the family loved it. I made a few changes based on other reviews, I only added 1 tablespoon of sugar and less paprika. I also made it much easier by using a bag of shredded coleslaw mix instead of chopping up a cabbage. I use spicy red pepper diced tomatoes for an added kick. Would definitely add more kielbasa next time. Thanks for the recipe!

This recipe was great, but there was way too much sugar! It ruined it. Remove the sugar, and you have a great recipe.

Everybody loved this recipe. I took other reviewers’ advice and cut the sugar to about two tablespoons. I also added some red bell pepper sautéed with the onions. My potatoes in the microwave took about 12 minutes. This is a keeper recipe that I will definitely make again.

I wish I had read the reviews before mixing the 1/4 cup sugar with the tomatoes. It was waaaay too sweet. I added lots of white vinegar, rice vinegar and balsamic. still really sweet. I lasso added garlic powder, cumin, and fish sauce. we love cabbage, tomatoes, and polish sausage. I will make it again with NO sugar. Also, I only used 5 baby potatoes as we did not want the carbs.
