Gyudon Japanese Beef Bowl Recipe

Ingredients

  • 1 large white onion
  • 1 teaspoon vegetable oil
  • cup water
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon mirin
  • 1 tablespoon sake
  • pound beef ribeye steak, thinly sliced
  • 1 tablespoon sesame seeds, or to taste (Optional)
  • 2 green onions, thinly sliced, or to taste (Optional)
  • 2 teaspoons pickled ginger (beni shoga), or to taste (Optional)
  • 1 sheet dried seaweed, cut into strips, or to taste (Optional)

Directions

  1. Halve the onion and discard the central-most part. Slice the onion halves thinly.
  2. Heat the vegetable oil in a large skillet or wok over high heat. Add the sliced onion and cook, stirring occasionally, until it begins to brown, about 30 seconds.
  3. Reduce the heat to medium-low. Add the water, soy sauce, brown sugar, mirin, and sake to the skillet. Stir to combine and let the mixture simmer for about 3 minutes, allowing the flavors to meld together.
  4. Add the thinly sliced beef to the skillet. Stir to coat the beef in the sauce and cook, covered, for 3 to 5 minutes, or until the beef is fully cooked through.
  5. Divide the beef stir-fry into two bowls. Garnish with sesame seeds, green onions, pickled ginger, and dried seaweed strips, if desired.

Cook's Note

You can substitute another type of rice wine for the sake if you prefer.

I enhanced the sauce by doubling the recipe and adding 2 extra tablespoons of low sodium soy sauce, as well as using fresh ginger and garlic. I served it over rice noodles and it was absolutely delicious.

This recipe serves as a great foundation, but I highly suggest incorporating additional seasonings to cater to your preference since it tends to be a bit lacking in flavor. We decided to include extra soy sauce as an initial trial, but we will definitely continue to experiment with different seasonings.

I made some substitutions since I didn't have sake on hand, so I used 2 tablespoons of Mirin instead. The dish turned out incredibly delicious! I will definitely be making it again. All of the steps were straightforward and easy to follow.

I found it to be quite plain. I plan to prepare it again, but next time I will add vegetables, ginger, and salt for more flavor. Additionally, I will double the sauce as we enjoy it when it seeps into the rice.
