Easy Chicken Primavera Recipe

Ingredients

  • cup all-purpose flour
  • 1 tablespoon dried parsley
  • 1 teaspoon dried basil
  • 1 pounds skinless, boneless chicken breasts, cut into strips
  • cup extra-virgin olive oil
  • 1 tablespoon minced garlic
  • 2 cups low-sodium chicken stock, or to taste
  • 1 cup frozen mixed vegetables
  • 1 pint grape tomatoes, halved
  • 1 bunch green onions, diagonally sliced
  • 1 medium zucchini, quartered and sliced
  • 2 tablespoons sun-dried tomato pesto
  • Salt and ground black pepper to taste

Directions

  1. In a medium bowl, whisk together flour, parsley, and basil.
  2. Add chicken strips to the bowl and toss well to coat each piece with the flour mixture.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the coated chicken to the skillet and cook, turning occasionally, for about 10 minutes or until lightly browned and no longer pink in the center.
  5. Stir in the minced garlic and cook for another minute until fragrant.
  6. Pour in the chicken stock and stir to combine, scraping up any browned bits from the skillet.
  7. Add the frozen mixed vegetables, halved grape tomatoes, sliced green onions, and zucchini to the skillet.
  8. Stir in the sun-dried tomato pesto, ensuring everything is well coated.
  9. Continue to cook, stirring occasionally, for 8 to 10 minutes until the vegetables are heated through and tender.
  10. Season with salt and pepper to taste and serve immediately.

I want to try this but cant seem to find tomato pesto what are suggestion for its replacement.

This was a hit! I decided to bake the chicken separately, so I made a few changes. I started with olive oil and one yellow onion in a pan with the garlic. Then added 2 cubed zucchini and 1 cubed yelllow squash. Also threw in 2 bell peppers and some spinach with the grape tomatoes because I had them on hand. Finally, I added 2 spoonfuls of cornstarch to the chicken stock before adding it so that I could get a thicker sauce to serve over angel hair. Overall, the ingredients all worked together incredibly well and it was a colorful meal.

This had no flavor, and had to add what was, in my opinion way too much salt and pepper. If I make again, I would add italian seasoning mixture to the breading, not just parsley and basil. I would decrease the stock to 2 cups, and add more fresh veggies such as mushrooms, maybe eggplant, broccoli and onion. I might add a splash of wine to it too. It just needs some bigger flavors. Definitely serve with Parm cheese, and even a sprinkle of mozzarella.

It was delicious. Used only fresh veggies. Sauteed zucchini, red pepper and mushrooms with chicken, then proceeded with rest of recipe. Also used more garlic and regular pesto. Will make it again!

This recipe is well designed mostly because it can be easily tweeked if so desired. I took heed to what some other reviewers said about the amount of chicken broth and began with only 1 1/4 cup. Added approximately 1/4 cup more after cooking sauce down considerably. I like the taste of tarragon so, I sprinkled some of that in, as well as it was cooking. Had some fresh sliced tomato from Sunday's dinner and added that in. Used Mexican squash instead of Zuchinni. Found some tomato pesto in a jar at Walmart. Added garlic powder as well as minced. The chicken turned out very tender and juicy. All in all, a wonderful recipe. Belongs in a really good recipe book. Thank you for sharing this with us. Your recipe is splendid.

Very good but I totally replaced the veggies. Fresh broccoli, sliced mushrooms, minced onion, fresh peas, matchstick carrots. Kept the grape tomatoes. Next time I’ll definitely include red bell pepper. Other than that, I followed recipe exactly. I served with grated cheese.

Pan-fried the chicken without the garlic first. Then deglazed pan with garlic and white wine. I used Riseling but it wasn't too sweet.

Use less chix stock. The veggies add a lot of juice to this dish, making it rather soupy. I set the chicken aside after cooking, and let the veggies simmer, adding flour to thicken it up before returning the chicken to veggies and serving it over angelhair. Pretty tasty but the veggies neede longer, slower cooking to release their flavors. Thinking leftovers tmw will be more absorbed and fuller in flavor.

Changed up the recipe altogether. Added Italian seasoning to the flour mixture instead of basil & parsley. Sautéed the onion garlic first to flavor the pan. Dipped the chicken in an egg batter to better coat with the flour mixture. Skipped the sun dried tomato pesto and green onions and used red & green bell peppers. I did used bone broth, for more enhanced flavor. Realized that I was hoping for more of a thicker sauce since it was more on the thin side. Overall, will try again with the modifications.

You can use fresh vegetables and really mix it up. I love this dish. It's nice and light and fresh.

I used fresh corn and sautéed red bell peppers in place of the mixed vegetables, and used fajita spice on the chicken. Also, regular pesto in place of the tomato pesto

Made it according to the recipe. It was good, but a bit bland. I will most likely make it again with doubled the seasonings.
