  • cup vegetable oil
  • 1 onion, chopped
  • 1 tomato, chopped
  • 2 slices habanero pepper (optional)
  • 1 garlic clove, chopped
  • 2 tablespoons Jamaican-style curry powder
  • teaspoon ground thyme
  • 2 skinless, boneless chicken breast halves, cut into 1 1/2-inch pieces
  • 1 cup water
  • teaspoon salt, or to taste

Directions

Step 1: Start by gathering all the ingredients youll need to prepare this dish.

Step 2: Heat vegetable oil in a skillet over medium-high heat. Once hot, add the chopped onion, tomato, habanero pepper, garlic, curry powder, and thyme. Stir frequently and cook until the onion turns golden brown, about 7 minutes.

Step 3: Add the chicken pieces into the skillet. Cook the chicken until it is lightly browned, around 5 minutes, stirring occasionally.

Step 4: Pour in 1 cup of water. Reduce the heat to low, cover the skillet, and let the chicken simmer for 30 minutes or until fully cooked and no longer pink in the center.

Step 5: Season with salt to taste. Stir everything together and ensure the flavors are well combined.

Simple and tasty! Following the suggestions of other reviewers, I made some adjustments to the recipe and it turned out great. I used 8 chicken thighs, two 14oz cans of diced tomatoes, cayenne instead of peppers, added 8 small red potatoes and 4 carrots. I also included about a cup of water and finished it off with some cream (added to taste). To account for the increased quantity, I upped the garlic to 3 cloves and used 3 heaping tablespoons of curry spice. I seasoned the chicken thighs with some of the curry spice and browned them first. The result was fantastic, and I'll definitely be making this again!

I enhanced the dish with a mix of fresh thyme, rosemary, and curry, along with some spicy peppers from my own herb garden. To enrich the flavors, I included fresh coconut, brown sugar, and almond milk. After letting the concoction simmer, I poured it over tender chicken, fresh baby carrots, and potatoes. The dish turned out absolutely delicious with a couple of modifications. I included 3 chopped red potatoes and a mix of red and green peppers. Since I didn't have fresh tomatoes on hand, I substituted them with a 13.5oz can of fire-roasted tomatoes. Following recommendations from other reviewers, I used 3 tablespoons of curry powder and added a can of coconut cream instead of water.

I found the dish to be a mix of flavors - both bland and excessively seasoned at once, a combination I had not experienced before. The habanero and curry powder were overpowering, masking other tastes. The chicken seemed a bit overcooked as well. If I were to prepare this again, I would reduce the amount of habanero or use a milder pepper. The sauce could benefit from being slightly thickened, although I'm not sure how to do that myself. With some adjustments, this dish has the potential to be quite delicious.
