Slow Cooker Taco Soup Recipe

Made this last night with the following adjustments: browned the beef with the taco seasoning to give it more flavor, used a 10.75 oz. can of tomato soup instead of the 8 oz. can of tomato sauce, added a packet of ranch dressing, only used 1 can of beans, used 1 can of "southwestern style" diced tomatoes (diced tomatoes and jalapenos) and 1 can of regular diced tomatoes, and only added 1 cup of water. It was perfect -- had a great consistency (not too thick, not too runny) and was spicy but not too hot. Definitely add a dollop of sour cream! Delicious!

Great! I made some substitutions. Instead of tomato sauce and water I added 2 c. V8 juice. And instead of the canned tomatoes and chilis I added 1 can of Rotell tomatoes.

The only thing I changed was that I used my Insta-pot for it. It takes 27 minutes to pressure cook rather than the 8-10 hours in the crock pot. I dont usually think of things that far in advance! Everyone whos had it loves it!! Ok, oops, I did do one other different: I made my own taco , seasoning , (also from All Recipes) because I didnt have any packaged ones. The one I made, was awesome, I just left out the cumin.

Super easy to prepare and make. It is something you can prepare the night before and cook in the slow cooker the next day, if needed. I did modify the recipe slightly to my taste. I sauteed the onion with garlic after browning the meat, replaced the 2 cups of water with 2 cups beer. I also added ranch dip mix for more flavor. The family and kids loved it. We'll be making this again.

Great soup! I drained the beans and corn instead of adding the extra sodium to the meal. At the end I stirred in a can of refried beans to thicken it as another user suggested. Amazing dish!

I used diced boneless skinless chicken thighs in place of ground beef. No need to precook the meat! And, I replaced the 2 cans of beans with a double sized can of refried beans. It was absolutely scrumptious!

I followed the recipe save for adding one packet of taco seasoning while the meat was browning, along with the onion. I also added two chopped jalapeños and half a green bell pepper

I made this recipe today with changes. I doubled the recipe. I brown my beef with the diced onions. I rinsed my pinto beans (remove some of the sodium and preservatives); no salt added corn; one regular and one low sodium taco seasoning; 1/4 teaspoon cayenne pepper; and instead of water (2 cups beef broth). I set the slow cooker to high to cut the time in half. My neighbor and I both love the simplicity and favor of this dish.

Fantastic!!! My son absolutely loved this and ate leftovers for days. He doesn't usually care for leftovers so that says how much he LOVED this recipe. I followed the recipe other than using 1 packet of taco seasoning with the browned beef in the skillet and then adding an additional taco seasoning packet to the crockpot with all of the ingredients.

Easy and tasted great! I would use half the amount of corn next time, and I used a can of beef broth in place of water. Everything else was the same. I had toppings of sour cream and shredded cheese and a sliced avocado. A hearty meal with cornbread on the side!

I've never eaten or made taco soup before and liked this was a crockpot recipe. I loved it! I sprinkled it with cheese and sour cream as suggested and ate it on tostitos. I mixed the taco seasoning with the beef and didn't add the extra water. Next time I'm going to sauté the onions. I'm excited knowing this will freeze well

I love this recipe and it tastes amazing. I add two packets of the cholula garlic chili taco seaonsing and it really helps when developing the flavors of the soup, plus I add mexican corn which also does well in the flavors of it.

To Paula Tucker…you could add a can of lentils or even dried lentils. They can cook to nothing and will thicken the soup if you wanted it thicker.
