Classic Minestrone Soup Recipe
Ingredients

- 1 tablespoon olive oil
- 1 cup diced onion
- cup diced carrot
- cup sliced celery
- 1 teaspoon minced garlic
- 1 teaspoons minced fresh rosemary
- 1 (15 ounce) can Contadina Tomato Sauce
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 2 cups water
- 2 cups College Inn Chicken Broth
- 1 cup diced zucchini
- cup dry ditalini pasta
- teaspoon black pepper
- cup chopped fresh Italian parsley
- 1 tablespoon shredded Parmesan cheese, or to taste
Directions
- Heat oil in a large saucepan over medium-high heat.
- Saut onion, carrot, celery, garlic, and rosemary until vegetables begin to soften, about 5 minutes.
- Stir in tomato sauce, beans, water, broth, zucchini, pasta, and pepper; bring to a simmer.
- Cook, uncovered and stirring occasionally, until pasta is tender, about 10 minutes.
- Stir in parsley.
- Serve topped with Parmesan and additional parsley, if desired.
Recipe Tip
You can use other small pasta instead of ditalini.

Fantastic! I opted for Mrs. Dash in place of Rosemary and the dish turned out deliciously spiced. In hindsight, I would omit the pepper since Mrs. Dash already contains it. Additionally, I chose fresh diced tomatoes over canned sauce, a decision I would repeat next time. To enhance the soup's texture and flavor, I will add the tomatoes earlier in the cooking process along with the onions. The result was a soup that received rave reviews from all, including individuals who typically aren't fond of zucchini. 🙂

Extremely user-friendly recipe to follow. I included an additional half pound of ground turkey and beef, but otherwise stuck to the instructions until the end.

I followed the recipe exactly, but substituted dried thyme for rosemary since I didn't have any. I doubled the batch for a potluck and it was a hit with everyone. Received lots of compliments!

This recipe is a keeper! It turned out great even though I omitted the cabbage. I used around 3/4 cup of pasta, and I believe it could have used a bit more - next time I'll add 1 cup.

I decided to use garbanzo beans and fresh spinach for this dish, and I was extremely pleased with how it turned out.
