Ingredients

  • 1 pound russet potatoes, peeled
  • 2 teaspoons vegetable oil
  • 1 pinch cayenne pepper
  • teaspoon kosher salt

Step-by-Step Instructions

Step 1: Cut the Potatoes

Peel the potatoes and slice them into 3/8-inch thick slices, then cut those slices into 3/8-inch wide sticks. This will give you the perfect French fry shape.

Step 2: Soak and Drain the Potatoes

Place the potato sticks into a bowl of cold water. Let them soak for about 5 minutes to release excess starch. After soaking, drain the potatoes, then pour boiling water over them to cover by a few inches. Let them sit for about 10 minutes to soften. Drain the potatoes again, and transfer them onto paper towels. Pat them dry to remove excess water.

Step 3: Cool the Potatoes

Let the potato sticks cool completely, at least 10 minutes. This step ensures that they crisp up nicely in the air fryer.

Step 4: Season the Potatoes

Once the potatoes are cool, place them in a mixing bowl. Drizzle with vegetable oil and sprinkle with cayenne pepper. Toss the potatoes well to make sure they are evenly coated with the oil and seasoning.

Step 5: Preheat the Air Fryer

Preheat your air fryer to 375F (190C) so its ready to cook the fries to crispy perfection.

Step 6: Cook the French Fries

Place the potato sticks in the air fryer basket in a double layer. Air fry for 15 minutes, then pull out the basket and toss the fries. Continue to cook for another 10 minutes or until they are golden brown and crispy.

Step 7: Add Salt and Serve

Once your fries are done, toss them with kosher salt in a mixing bowl for extra flavor. Serve immediately while theyre still hot and crispy!

How to Store Air Fried French Fries

If you have any leftover fries, let them cool completely to room temperature. Store them in an airtight in the fridge for up to five days. To reheat, place them back in the air fryer, microwave, or oven for the best results.

Amazing fries! These were so good, and just the perfect balance of crispy on the outside and soft on the inside. I made them just as the recipe directed, and we loved them!

followed basic instructions- rated 5 for easy to follow and get great tasty crispy results. Short on time, I used my little mandolin slicer for julienne potato fries or shoestring. Did the cold water, hot water thing(perfect)! I had to tweak seasonings (don't want cayenne pepper) used a mix of kosher salt, paprika, garlic powder, and sprinkled on fries while tossing in bowl with oil. Maybe 15mintotal--10min cook time as they were shoestrings. Toss in basket and 5 min more, to crisp. Will not be buying frozen shoestring any more. Will try again with larger cut fries. Steak fries are hubby's fav. Thank you Chef John

I cut the potatoes as shown on video, a bit larger than normal. Soaked in tap water 60 minuets and then patted dry. After tossing with olive oil and cayenne, air fried 20 mins. The best fries I have ever made, crispy on outside, fluffy inside, delicious!

This makes air-fryer chips as great as you make with deep fat! When I poured over the boiling water, I added 1/4 tsp of baking soda—not enough to taste, but it adds crispness. Another Chef John fave in this house.

I air fried at 400F for 14 minutes. Then I flipped the fries and 10 more minutes. I added more garlic, pepper and smoked cayenne and a bit of Cajun seasoning. Not to much. Dash of good Himalayan salt too. I tossed with spice in the peanut oil. After done I sprinkled a little fry spice and tossed again. Delicious and everyone loved them. I’m gonna up the temperature a little more to get crispier fries. I like this recipe with my tweaks. Defined cook at 400F. For me 410F same time as recipe requires.

Dusted off the air fryer I got for Christmas 2 years ago! This recipe made great fries. I soaked the peeled fries in hot tap water 15 minutes, 3 times to remove starch, followed recipe exactly otherwise. They were crispy and delicious! Thanks, Chef John!

I only added garlic powder, onion powder and parsley to mine. I had to cook it a little longer, but they were fantastic!

Followed recipe except I added some turmeric for color and bit of smoked paprika. I added sea salt right before serving. They looked and tasted delicious and all gone!

I have used the cold water soaking method and the no soaking method. This method is slightly better; however, I would say that 25 minutes is a little too long. Twenty-three minutes is probably the sweet spot in my air fryer. I seasoned mine with a knockoff recipe for nacho fry seasoning. I am unsure if I will use this method again or just do the cold soak and skip the extra step.

Best fries I've ever made! I followed the directions exactly EXCEPT I airfried mine 16 minutes total, shaking the basket after 8 minutes. I did also use a french fry cutter so my fries were of uniform size and I didn't crowd the fries, only putting them in a single layer. Crisp on outside, tender on the inside! Delicious!

Loved making it, we had fun, two old kids just watching ,waiting, finally eating and enjoying. The only thing we changed was Cayenne Pepper my wife can't have spicey food.

The fries were great but not as brown as Chef John’s. Next time I might try slightly longer time or higher temperature.
