Fried Bologna Casserole Recipe
Original Recipe Yield: 4 servings
Ingredients:
- 8 slices bologna
- 3 tablespoons butter
- 1 onion, chopped
- 4 cups warm mashed potatoes
- 1 cups shredded Cheddar cheese
Directions:
Step 1: Preheat your oven to 350F (175C). Grease a 1 -quart baking dish with butter or cooking spray.
Step 2: Heat a skillet over medium-high heat. Add the bologna slices to the skillet and fry until they are browned on both sides, which should take about 1 minute per side. Once browned, transfer them to a paper towel-lined plate to drain any excess grease.
Step 3: Wipe the excess grease from the skillet and reduce the heat to medium. Add butter and chopped onion to the skillet. Cook, stirring occasionally, until the onion softens and turns translucent, about 5 minutes.
Step 4: Stir the cooked onions into the warm mashed potatoes, combining them well.
Step 5: Spread half of the mashed potatoes into the prepared baking dish.
Step 6: Layer half of the fried bologna slices on top of the mashed potatoes, followed by half of the shredded Cheddar cheese.
Step 7: Repeat the layers with the remaining mashed potatoes, bologna, and cheese.
Step 8: Place the casserole in the preheated oven and bake uncovered for about 30 minutes, or until the cheese is bubbly and the center is hot.

I absolutely adore this recipe! It offers a unique twist from the one I'm familiar with from my childhood. Instead of the traditional version my Mom used to make, which we called "bologna boats," where she would lay bologna slices on a cookie sheet, top them with mashed potatoes and cheese, and place them under the broiler until the bologna would curl up, forming a cup to hold the potatoes and cheese.

I made a delicious dish with just 2 cups of mashed potatoes, 6 slices of Bologna, and 1 cup of grated cheese. I divided it into 2 mini casserole dishes, which were the perfect size for the Bologna slices. The potatoes were boiled in chicken broth, adding a yummy flavor to the dish. This dish is absolutely delightful! I didn't have any bologna on hand, but I used wieners instead - they're pretty much the same thing, just a different shape, right? I sliced the wieners and fried them with onions before following the rest of the original recipe. Everyone at the table loved it, and it even sparked memories for some of us who recalled enjoying a similar dish in the school cafeteria back in the 1950s.

Swapped tater tots for mashed potatoes, seasoned with garlic powder and seasoning salt instead of onions and butter. Doubled the bologna to use up the whole pack. Absolutely delicious! Huge thanks to "Allrecipes" for the awesome idea!
