Enchanted Sour Cream Chicken Enchiladas Recipe

Chicken Enchiladas

This classic recipe for Chicken Enchiladas is full of flavor and perfect for a comforting meal. The combination of tender chicken, creamy sour cream, and melted Monterey Jack cheese wrapped in soft corn tortillas will quickly become a family favorite.

Ingredients:

  • 2 cups cubed cooked chicken
  • 1 cup sour cream
  • 1 teaspoon salt
  • 1 pinch ground black pepper
  • cup vegetable oil for frying
  • 12 (5 inch) corn tortillas
  • 1 (4 ounce) can chopped green chilies, drained
  • 2 cups shredded Monterey Jack cheese

Directions:

  1. Preheat your oven to 400F (200C). Grease a 9x13 inch baking dish and set it aside.
  2. In a mixing bowl, combine the cubed chicken, sour cream, salt, and black pepper. Stir everything together and set aside.
  3. Heat the vegetable oil in a skillet over medium-high heat. Once hot, dip the corn tortillas one at a time into the oil, allowing them to soften for about 10 seconds each. Remove and set them aside on a paper towel to drain excess oil.
  4. Once the tortillas have cooled slightly, spoon a heaping tablespoon of the chicken mixture onto the center of each tortilla. Spread it out evenly down the middle.
  5. Roll each tortilla into a cylinder, ensuring the seam side is down, and place them in the prepared baking dish.
  6. Once all tortillas are rolled and placed in the dish, sprinkle the drained green chilies over the top of the enchiladas. Then, top with the shredded Monterey Jack cheese.
  7. Bake the enchiladas in the preheated oven for 12 to 15 minutes, or until the cheese has melted and the enchiladas are hot throughout.

It's okay, but could use some improvements. The picture seems to show cheddar cheese, but the recipe video includes onions and tomatoes in the chicken mixture. However, the recipe itself only mentions tomatoes on top. I followed a suggestion to add Rotel to the chicken mixture, which helped prevent it from being dry and bland. Overall, don't expect them to taste like traditional red sauce enchiladas.

Amazing! I made a few tweaks, but this recipe is a fantastic starting point! I included a can of cream of chicken soup, a packet of taco seasoning, 2 freshly chopped jalapeños (cooked with the chicken), and topped it all with salsa verde before adding mozzarella cheese. Baked it until hot and bubbly! The flavors were outstanding! My husband and I absolutely enjoyed it prepared this way!

I tried out this recipe for dinner yesterday and it was a hit! My wife, who had just finished work, absolutely loved it and called it a 'winner'! We decided to drizzle a can of green enchilada sauce on top before adding the cheese and baking it, and it added a wonderful flavor. The dish turned out really delicious! I would definitely remake this dish. My family absolutely enjoyed it. However, I found it to be on the milder side for my taste. Personally, I would prefer it to have more spice and heat.
