Chef John's Tandoori Chicken Recipe

Ingredients

  • lime, juiced
  • 1 tablespoons plain yogurt
  • 1 tablespoons tandoori masala powder
  • Salt and freshly ground black pepper to taste
  • 2 pounds boneless, skinless chicken thighs

Original recipe yield: 6 servings

Directions

Step 1: In a medium bowl, whisk together lime juice, yogurt, tandoori masala, salt, and black pepper until smooth and well combined.

Step 2: Pour the mixture into a resealable plastic bag. Add chicken thighs, making sure each piece is fully coated. Squeeze out excess air and seal the bag securely. Refrigerate for at least 2 hours to allow flavors to meld.

Step 3: Preheat an outdoor grill to medium-high heat and lightly brush the grill grate with oil to prevent sticking.

Step 4: Remove the chicken from the marinade and place it on a plate or baking sheet lined with paper towels. Pat the chicken dry with additional paper towels for a crispier exterior.

Step 5: Grill chicken with the lid open for 2 minutes to sear the outside. Then close the lid and cook for another 6 minutes.

Step 6: Turn the chicken over, close the lid, and continue grilling for an additional 6 minutes, or until the chicken is golden brown and no longer pink in the center. An instant-read thermometer inserted into the thickest part should register 180F (82C).
