Honey Mustard Chicken Thighs
Ingredients
- cup Dijon mustard
- cup grainy mustard
- cup honey
- 1 teaspoon soy sauce
- 2 teaspoons chopped fresh tarragon
- 1 tablespoon finely grated ginger root
- 8 skinless, boneless chicken thighs, trimmed of excess fat
Directions
Step 1: Preheat your oven to 350F (175C).
Step 2: In a large bowl, combine the Dijon mustard, grainy mustard, honey, soy sauce, chopped tarragon, and grated ginger.
Step 3: Rinse the chicken thighs under cold water and pat them dry using paper towels.
Step 4: Add the chicken thighs to the bowl with the sauce and toss them to coat evenly.
Step 5: Transfer the coated chicken thighs to a baking pan, and spoon any remaining sauce over the top.
Step 6: Bake the chicken in the preheated oven for about 45 minutes, or until the chicken is no longer pink in the center and the juices run clear. You can check the internal temperature with an instant-read thermometer - it should reach 165F (74C).
Step 7: Once cooked, spoon the sauce from the pan over the chicken thighs before serving.

Easy recipe and quite tasty. I used dried tarragon because I didn't have fresh which I'm sure would have been better. I used more ginger to boost the flavor. I might add a small amount of either red pepper flakes or chipotle pepper flakes next time.

I like to follow recipes to the T. If it passes the dinner table test, no changes to be made. We use the recipe critique as a dinner table family conversation, making changes the next time we make the meal, if any. Served it alongside a simple rice, pea and carrot mix. Had great taste and flavor but the tablespoon of ginger was just a little too much. Passed the test but will definitely cut the ginger by half.

The only change I made was substituting 1 tsp dried tarragon for the fresh tarragon called for. A big hit with guests!

I removed excess fat from thighs, but kept some of the skin on. Baked at 350 for 1/2 hour and turned it up to 375 to crisp. My husband and son both loved it.

I used chicken breasts instead of thighs. (To me, the picture looks like chicken breasts.). The sauce was very tasty. I will make this again.

Just the right amount of sweet and spicy. Family loved it. I love the flavor from fresh tarragon it’s the first recipe I’ve used that calls for it but I’m sure to try more😊

It was ok - I didn’t have any tarragon so that may have been the issue. Needed to thicken the sauce after cooking. Served it on the side with rice.

Used chopped rotisserie chicken and sauce and was good. Not a huge fan of the sweetness of the honey mustard, probably will reduce the honey next time.

Delicious and slightly sweet. I served with rice and lots of vegetables and a salad. Easy weeknight dinner.
