Steak and Potato Tacos with Poblano Chilies
Cook Time: 25 minutes
Ingredients:
- 2 tablespoons olive oil, divided
- 1 large onion, sliced
- 2 poblano chilies, stemmed, seeded, and sliced
- 12 ounces white potatoes, quartered lengthwise, cut crosswise into 1/4-inch thick slices
- 1 (12 ounce) flank steak
- Garlic powder
- Chile powder
- 12 (6-inch) corn tortillas
- Chopped fresh cilantro
- Pico de gallo and/or hot sauce (for serving)
Directions:
- Heat 1/2 tablespoon of olive oil in a large non-stick skillet over medium-high heat. Add the onion and poblano chilies, sauting them until tender, about 10 minutes. Once done, transfer the onion mixture to a bowl and set aside (do not wash the skillet).
- In the same skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the potato slices and saut until golden brown and tender, about 12 minutes. Once the potatoes are done, return the onion mixture to the skillet and keep everything warm on low heat.
- While the potatoes are cooking, generously season both sides of the flank steak with garlic powder, chili powder, salt, and pepper.
- Heat the remaining 1/2 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak and cook for about 4 minutes on each side, or until browned and cooked to medium-rare (approximately 8 minutes in total). Once done, transfer the steak to a cutting board and let it rest for 5 minutes.
- While the steak is resting, warm the tortillas on a griddle or over a gas flame, turning frequently with tongs until they are heated through.
- Thinly slice the rested steak against the grain.
- Assemble the tacos by topping each tortilla with a generous portion of the steak and potato mixture. Sprinkle with fresh chopped cilantro and serve with pico de gallo and/or hot sauce on the side.
