Crunchy Cheesy Fish and Spinach Casserole Recipe
Spinach and Cod Casserole
Ingredients
- 1 pound fresh spinach
- 1 teaspoon garlic salt
- 1 pound cod, cut into large pieces
- 1 lemon, zested and juiced
- 1 tablespoon chopped fresh dill
- 1 teaspoon sea salt
- teaspoon cracked black pepper
- 1 cup shredded sharp Cheddar cheese
- cup Italian-seasoned bread crumbs
- cup panko bread crumbs
Directions
Step 1: Preheat the oven to 450F (230C). Spray a 9x13-inch casserole dish with cooking spray.
Step 2: Evenly spread the spinach in the bottom of the prepared casserole dish. Sprinkle with garlic salt.
Step 3: Arrange the fish pieces on top of the spinach. Place the larger pieces toward the edges of the dish.
Step 4: Top the fish with lemon zest, lemon juice, chopped dill, sea salt, and cracked black pepper.
Step 5: In a bowl, combine the shredded Cheddar cheese, Italian-seasoned bread crumbs, and panko bread crumbs. Spread the mixture evenly over the fish.
Step 6: Cover the casserole with aluminum foil and bake for 12-15 minutes.
Step 7: After 12-15 minutes, uncover the casserole and continue to bake for an additional 5-8 minutes, or until the fish flakes easily with a fork and the topping is lightly browned and crunchy.
Tips
Substitute any mild white fish for the cod if desired.

Absolutely fantastic!!!! I had been craving cod and panko for days, so I started my search and stumbled upon this quick and easy recipe. I was pleasantly surprised by how it turned out. I didn't have cheddar cheese on hand, so I substituted with a blend of 4 cheeses (Italian blend) and Asiago cheese instead. Let me tell you, the dish turned out amazing!! This recipe is definitely going into my regular rotation.

I absolutely love this recipe! I've made it several times now and it's so convenient for busy days. I follow the recipe closely, but I reduce the amount of dill as it's not my favorite flavor. The spinach always ends up being piled much higher than my 9x13 dish, so I have to press it down to fit everything inside, but it bakes down perfectly so it's not a problem. I've tried making this with both cod and tilapia, and they both turn out delicious. When using tilapia, I recommend adding a bit of extra water to the dish to prevent the spinach from drying out. Be careful not to overcook it, otherwise, the spinach can become dry. This has quickly become one of my favorite recipes!

I prepared this dish yesterday and found it to be decent. However, I believe I will reduce the amount of salt to half a teaspoon next time, as my husband and I felt that it was too salty. The only modification I made was using dried dill weed instead of fresh, and opting for cream of celery instead of mushroom soup as recommended in another review. I anticipate that it will turn out better when I make it again.

The entire family, including our very selective preschooler, loved this dish! I didn't have any lemon or dill on hand, so I omitted those ingredients, but surprisingly, the meal was still delicious. To prevent the spinach from drying out, I added some butter as suggested by other reviewers, and it added a nice touch of flavor.

This dish was average at best. Keep in mind that if you choose to prepare it, the cooking time will be longer for 1-inch thick cod pieces. Following the recipe's advice to break them into smaller pieces would have resulted in a quicker cooking process. I doubt I'll attempt this recipe again.

I absolutely adored the blend of spinach and fish in this dish (although we prefer to add even more spinach). Everything else was perfect. However, I did come across a review where someone mentioned swapping out the egg for mayo... they may have been looking at a different recipe because there's no mention of egg in this one. Just something to think about.
