Tex-Mex Grilled Shrimp and Salsa
Ingredients
This recipe is designed for 4 servings. Ingredient quantities adjust automatically if scaling, but cooking times remain unchanged. Note that not all recipes scale perfectly.
Shrimp:
- 1 pound raw jumbo shrimp, peeled, tails left on
- 1 tablespoon olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground cumin
Salsa:
- 4 Roma tomatoes
- 1/2 large onion
- 1/2 head garlic
- 1 jalapeno pepper
- 1 tablespoon lime juice
- 1 teaspoon salt
- 1/4 cup fresh cilantro, chopped
Directions
Step 1: In a large bowl, combine shrimp with olive oil, paprika, chili powder, and cumin. Stir gently until all shrimp are evenly coated. Cover and place in the refrigerator while preparing the salsa.
Step 2: Preheat your grill to medium-high heat and lightly oil the grate.
Step 3: Grill the tomatoes, onion, garlic, and jalapeno for 4 minutes. Flip and continue grilling until the tomatoes and jalapeno are blistered, about 4 more minutes.
Step 4: Remove the tops of the tomatoes and discard. Cut the jalapeno in half, scrape off the skin, and remove seeds. Quarter the onion and squeeze the garlic cloves from their skins.
Step 5: Place all grilled vegetables into a blender. Add lime juice and salt, and blend until smooth. Add chopped cilantro and pulse briefly to incorporate evenly.
Step 6: Transfer the shrimp to the hot grill and cook for 2 minutes on each side, until pink and opaque.
Step 7: Serve the grilled shrimp with the freshly prepared salsa for a vibrant, flavorful dish.
