Chicken and Brussels Sprouts with Bacon and Potatoes Recipe
Ingredients
- 4 skin-on, bone-in chicken thighs
- 1 pound red potatoes, halved or quartered if large
- 1 pound Brussels sprouts, trimmed
- 1 teaspoon minced garlic
- 1 tablespoon olive oil, or as needed
- Cracked salt and freshly ground black pepper, to taste
- teaspoon dried thyme
- 1 (1 ounce) package ranch dressing mix
- 6 slices bacon, chopped
Directions
Step 1: Preheat the oven to 400F (200C). Arrange the chicken thighs in a 9x13-inch baking dish.
Step 2: In a bowl, toss the potatoes, Brussels sprouts, and garlic with olive oil until the vegetables are lightly coated.
Step 3: Arrange the vegetables around and between the chicken thighs in the baking dish.
Step 4: Season the chicken and vegetables with salt, pepper, and dried thyme. Evenly sprinkle the ranch dressing mix over the top.
Step 5: Scatter the chopped bacon over the chicken and vegetables.
Step 6: Bake in the preheated oven for 30 to 35 minutes, or until the chicken is no longer pink at the bone and the juices run clear. An instant-read thermometer inserted near the bone should read 165F (74C).
Step 7: Set the oven rack about 6 inches from the heat source and preheat the broiler.
Step 8: Place the baking dish under the broiler and cook for 2 to 3 minutes, or until the chicken skin becomes golden brown and slightly crisp.

This recipe provided a solid foundation, but it lacked flavor. The potatoes were still raw after 35 minutes of cooking, so I covered them with foil and baked them for an additional 20 minutes. This ensured that everything was fully cooked. Next time, I plan to season the vegetables and chicken separately with ranch seasoning. I also intend to cook the bacon separately as most of it ended up being soggy, and I prefer crispy bacon.

We were searching for a new way to prepare defrosted boneless, skinless chicken thighs and stumbled upon this recipe. It turned out to be absolutely delicious! Since we didn't have any Brussels sprouts on hand, we opted to use fresh asparagus instead. We chopped the asparagus into roughly 1-inch pieces, and it worked beautifully! To finish, we topped the dish with shredded Parmesan cheese and broiled it on low for a few minutes. Overall, a fantastic meal that we will certainly be making again!

I found this recipe to be quite simple and bursting with flavor. However, the vegetables turned out undercooked despite my efforts to quarter the potatoes and halve the Brussels sprouts. Personally, I prefer caramelized vegetables, so next time I prepare this dish, I plan to quarter the Brussels sprouts and slice the potatoes into 1-inch coins. During the final 10 minutes of cooking, I intend to take the vegetables out and finish by caramelizing them in a frypan. Overall, thank you for this speedy and delicious recipe.
