Salsa Chicken Rice Casserole Recipe

Recipe: Cheesy Chicken and Rice Casserole

Ingredients (for 8 servings):

  • 1 cups uncooked white rice
  • 2 cups water
  • 4 skinless, boneless chicken breast halves
  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded Cheddar cheese
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 onion, chopped
  • 1 cups mild salsa

Directions:

  1. Place the rice and water into a saucepan and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the water is absorbed.
  2. While the rice is cooking, add the chicken breasts to a large saucepan. Fill the pan with enough water to cover the chicken, bring it to a boil, and cook for about 20 minutes, or until the chicken is fully cooked. Once done, remove the chicken from the water and set it aside to cool.
  3. Once the chicken is cool enough to handle, cut it into bite-sized pieces.
  4. Preheat your oven to 350F (175C). Lightly grease a 9x13 inch baking dish to prevent sticking.
  5. In a medium bowl, combine the shredded Monterey Jack and Cheddar cheeses.
  6. In another bowl, mix together the cream of chicken soup, cream of mushroom soup, chopped onion, and salsa until well combined.
  7. To assemble the casserole, start by layering half of the cooked rice at the bottom of the prepared baking dish. Follow this with half of the chopped chicken, half of the soup and salsa mixture, and half of the cheese mixture.
  8. Repeat the layers, starting with the remaining rice, then chicken, soup mixture, and finishing with the remaining cheese.
  9. Place the casserole in the preheated oven and bake for about 40 minutes, or until the dish is hot and bubbly, and the cheese is melted and slightly golden on top.
  10. Remove from the oven and allow it to cool slightly before serving. Enjoy your cheesy, comforting chicken and rice casserole!

I made a couple of tweaks to this recipe. First, I swapped salsa for a can of Rotel, and secondly, I combined the rice and soup mixture before layering. I prepped it in the morning and baked it in the afternoon, covering it with Reynolds non-stick foil for 30 minutes, then removing the foil and baking for an additional 10 minutes to keep the cheese moist and stringy instead of crusty. My whole family loved this dish, and it reheated well for my husband's lunch the next day. This recipe is highly customizable in terms of spice level. Thank you for sharing this wonderful recipe!

The dish was really tasty, I followed the recipe closely but reduced the amount of cheese by half. Instead of one of the canned soups, I used sour cream and added some extra Mexican seasoning. I will definitely be making this again!

My children adore this recipe! The only modification we make is including a can of crushed tomatoes and occasionally using different types of cheese based on what we have available. We enjoy serving it with tortilla chips!
