Chicken Chilaquiles Recipe
Chilaquiles with Chorizo and Chicken
Ingredients
- pound chorizo
- 2 skinless, boneless chicken breast halves, cut into 1-inch cubes
- (10 ounce) bag tortilla chips
- 1 cup frozen corn kernels
- 1 (19 ounce) can green enchilada sauce
- cup sour cream
- 2 cups shredded Monterey Jack cheese
Directions
- Preheat the oven to 400F (200C).
- Heat a large skillet over medium-high heat. Add chorizo and cook, stirring often, until it becomes crumbly, about 5 minutes.
- Add chicken cubes to the skillet. Continue to cook, stirring occasionally, until the chicken is fully cooked and no longer pink in the center, around 10 minutes.
- In a casserole dish, spread half of the tortilla chips evenly over the bottom.
- Top the chips with the chorizo and chicken mixture.
- Evenly sprinkle frozen corn over the chicken mixture and then layer the remaining tortilla chips on top.
- In a mixing bowl, whisk together the green enchilada sauce and sour cream until smooth. Pour this mixture evenly over the layered chips and chicken.
- Sprinkle shredded Monterey Jack cheese generously over the top.
- Bake the chilaquiles in the preheated oven for 15-20 minutes, or until the casserole is bubbly and the chips begin to brown.

very, very good! I did not have any tortilla chips, so i used corn tortillas that I tore and placed in the baking dish. I had left over beans and rice so I threw them in the dish as well and baked. Thanks for a really tasty recipe!

I followed this pretty much as given . Everyone loved it but I will make a couple changes...I'll use more Chorizo to increase the "heat" and back off on the chicken (only because I added more to the recipe). I only had a 15oz can of green sauce so I added a 4oz can of diced green chiles. Both these adjustments made it a bit dry so next time I will pour most of the green sauce & green chilies over the chicken mixture, then add the chips with the rest of the sauce drizzled over the chips, then the cheese on top. This is so easy & quick. And it can be adjusted to your family's palate. Thank you for a great keeper recipe!

more real if you blend 1 large tomato, 1/2 a serrano chile, 1 small garlic & a bunch of cilantro leaves with enough water. You fry this with little oil and chicken boullion until it thickens, in this mix you place whatever...chicken, tuna, ham... Your chips of fried tortilla pieces you serve on a dish and you pour the sauce with the meat on top. You can add cheese to it.

This was so easy to make an so delish! I did not have all the needed ingredients on hand, so this is what I did: Had some shredded roast chicken that I needed to use up, so I used that instead of the cubed chicken & chorizo. I sprayed my casserole dish with cooking spray, tossed in crushed tortilla chips, a layer of my shredded chicken, a layer of canned corn and topped off with the green enchilada/sour cream mixture and 2 cups of shredded mont. jack cheese for 20 mins. My son could't get enough of it. We had this for brunch.

07-27-16 ~ We liked this casserole! I believe this was my first time in cooking with chorizo. It was hard to tell when the meat was browned as it is so red in color that it doesn't brown. I just browned a really long time to make sure it was done. I used two ears fresh corn since it is in season rather than frozen. I boiled on the stove top and then cut off the cob. It worked great. I did use only 1 cup of cheese as we didn't need all the extra calories and the amount was perfect for us. It was more then enough to cover an 11" x 7" baking pan. We really liked this and I would make it again. I added some diced jalapeños to the middle layer and had shredded lettuce and diced tomatoes on the side for a topper.

I thought this was really good...the whole family liked it. Next time I will lower the oven temp to 350 because the chips got a bit brown and tough. I used diced rotisserie chicken to save time and it was perfect. I also used shredded sharp cheddar which I think made the flavor better than it would have been with a mild Monterrey Jack.

Made this tonight for supper and got rave reviews from my husband, he;s already requested that we have it again! I used fat free sour cream and had 4 blend mexican cheese so used that and had canned corn so used that rather than frozen. Instead of layering the different items I mixed everything together including 2/3 of the cheese, then put it all into the baking dish and sprinked the rest of the cheese on top along with some sliced up black olives. Thank you for a very good, quick and easy recipe that we will be fixing often. This would be a good dish to fix up ahead of time for a pot luck!

Great hit with the kids! I followed the recipe, with a few exceptions. I didn't have sour cream so I used about 1/3C of plain Greek yogurt, which was fine. I wish added about half a cup of black beans, I would definitely recommend doing that. I added some thinly sliced poblano on half (some here don't like peppers), it looked nice but didn't add much flavor. One kid called this Taco Bell Lasagna, as I make alot of Mexican food and this is the most Americanized dish I've made.

This is an easy recipe and it uses few ingredients. Tastes delicious and it’s quick too. I prefer shredded chicken so I used a rotisserie chicken from the grocery store. I cooked the chorizo and then added the already cooked shredded rotisserie chicken to it. I didn’t have the cheese in the recipe on hand so I used what I had. A bag of shredded cheeses - a blend of Mexican cheeses. My hubby liked the recipe so much I made it again and used a different cheese I had in the fridge quest rallado. This recipe was so yummy with either cheese.

This was very good! I made a few changes based on others comments. I used boneless skinless thighs instead of breasts and doubled the recipe. I also added cheese and sauce between layers. Next time I think I’ll add green onions and tomatoes on top to add some fresh veggies. But it had great flavor and I did not need to add any salt or spices since the chorizo and sauce were so flavorful! Definitely will make again!

I am unable to cook a recipe as directed. I boiled and shredded the chicken before I threw it in with the chorizo. Added a can of fire roasted tomatoes and green chilies. I decided it was too spicy for hubby, so I added a little bit of sour cream and cream of chicken soup. I used corn tortillas instead of chips. I added a can of cheese soup to the green sauce with a little more sour cream. Awesome!

This is incredible. Definitely a new favorite and really easy. Followed the recipe exactly just used vegetarian chorizo and chicken substitutes.

This was a tasty and simple recipe. Tortillas or tortilla chips work just fine interchangeability. It is also easy to include any leftover taco meat or other Mexican items for a little change. Enjoyed it and will make it again.

Very tasty and easy. I didn't get to the store to get chorizo though so I just used chicken and some extra seasonings. Sure it would have been even better with the chorizo but it was still good. :-)

This was an easy meal, exceptional taste, and fun to make. I'm starting to love chorizo. I used to substitute it but then tried it and it really adds to the flavor. Thank you.
