Runzas (Bierocks) Recipe

Ingredients

  • 1 (3 pound) package frozen white bread dough
  • 1 pounds ground beef
  • 1 medium head cabbage, shredded
  • 1 pound shredded mozzarella cheese
  • Salt and pepper to taste
  • Vegetable oil

Directions

Step 1: Begin by thawing the frozen bread dough. Once thawed, cut each roll into 3 pieces and set them aside.

Step 2: In a large skillet, brown the ground beef and shredded cabbage together, seasoning with salt and pepper to taste. Cook until the beef is fully browned and the cabbage has softened.

Step 3: Preheat your oven to 350F (175C).

Step 4: Roll out the bread dough on a clean surface and cut it into squares of your preferred size.

Step 5: Place a spoonful of the beef and cabbage mixture in the center of each dough square. Sprinkle a generous amount of shredded mozzarella cheese over the mixture.

Step 6: Fold the dough over the filling and pinch the edges to seal the pastry, ensuring the filling is enclosed.

Step 7: Lightly rub a bit of vegetable oil on the outside of each pastry for a golden, crispy finish.

Step 8: Arrange the pastries in a 9x13 inch baking dish, ensuring they fit comfortably without overcrowding.

Step 9: Bake the pastries in the preheated oven for 45 to 60 minutes, or until the tops are golden brown and the dough is cooked through.

I would rate this dish with three stars because the concept is fantastic, but unfortunately, the initial version was quite bland and left me disappointed. Nevertheless, I saw potential in the recipe and decided to give it another try. Instead of using ground beef, I opted for thinly sliced steak from the local butcher, which I marinated beforehand. While the steak was marinating, I sautéed a combination of onions, cabbage, green bell peppers, mushrooms, and garlic with seasonings like garlic salt, pepper, onion powder, and Worcestershire sauce. After setting aside the veggies, I cooked the marinated steak in the same pan. I assembled the sandwiches by placing two slices of provolone cheese in each roll, topping them with the sautéed veggies and steak. To complete the meal, I made a side of au jus for dipping.

Review rewritten: Amazing! I tried a few recommendations from others and added my own twist to the recipe. I used only a quarter of a cabbage as we're not big fans of it. Additionally, to the skillet, I added a medium onion, 2 tablespoons of minced garlic, 1 tablespoon of Worcestershire sauce, and 1 pound of shredded cheddar cheese. I mixed everything together in the skillet, excluding the cheese. After browning the hamburger, I turned off the stove and then stirred in the cheese. It only needed to bake for 50 minutes. After cooling, I sliced some in half and added a slice of American Cheese. Absolutely delicious!

My family absolutely adores Bierocks. The only variation I make is that once I spread the filling on the flattened dough, I fold up all four sides of the dough and secure them with a wooden toothpick. This not only makes it a visually appealing dish but also prevents any cheese from leaking out. Such a simple yet effective trick!

This recipe was absolutely fantastic! The cookies turned out just like I remember them tasting. Even my kids couldn't get enough of them. They remained delicious and soft even the next day. A tip for beginners like me: make sure your dough is fully defrosted to avoid unnecessary extra work :)

It lacked flavor. I strongly recommend adding sauerkraut, various herbs and spices, and more.
