Grilled Pork Chops with Fresh Nectarine Salsa Recipe

- 2 nectarines, pitted and diced
- 1 ripe tomato, seeded and diced
- cup diced onion
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice
- teaspoon crushed red pepper flakes, or to taste
- Salt to taste
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and ground black pepper to taste
- 2 tablespoons olive oil
- 8 (4 ounce) boneless pork loin chops
Directions
- Preheat an outdoor grill to medium-high heat. Lightly oil the grate and set it 4 inches from the heat.
- To make the salsa, combine nectarines, tomato, onion, cilantro, lime juice, and red pepper flakes in a bowl. Toss to blend and season with salt. Cover and refrigerate for 30 minutes to allow the flavors to meld.
- In a small bowl, stir together cumin, chili powder, salt, and black pepper. Set aside.
- In another small bowl, pour the olive oil. Brush the pork chops with the oil, then season both sides evenly with the cumin mixture.
- Place the pork loin chops on the preheated grill. Cook for about 4 minutes on each side, or until the chops are lightly browned and the juices run clear.
- Transfer the pork chops to serving plates and top each with a generous spoonful of the prepared salsa.

I had to substitute peaches for nectarines and pan-fry the pork instead of grilling it. I also opted for harissa paste instead of red pepper flakes and chili powder, and I'll definitely do that again as it added a wonderful flavor. Despite these changes, it turned out delicious! I believe it would pair well with any type of meat or fish. I'm looking forward to making it again with nectarines and adding extra cilantro. For the pan-frying method, I brushed both sides of the pork with grapeseed oil, seasoned with salt and pepper, and lightly coated it with a mixture of cumin, coriander, onion powder, and garlic powder. I then coated the bottom of a cast iron pan with grapeseed oil and fried the pork over medium-high heat for about 4 minutes on each side. The result was perfectly tender with a great color.

I absolutely adored this salsa! I decided to add extra onions for a more crunchy texture, and I also threw in 1/2 tsp of garlic powder. To mellow out the spiciness, I skipped the black pepper and used Trader Joe's Chile Lime Seasoning Blend instead of chili powder. Since I wanted to balance out the heat, I paired it with the Chipotle Crusted Pork Tenderloin from All Recipes, which already had a nice kick (even though I reduced the Chipotle Chile Powder from 3 Tbsp to 1 Tbsp). I believe this salsa would complement pork, chicken, fish – you name it! It tasted incredibly fresh and added a lovely touch to my meal.

Amazing! I opted for boneless spare ribs instead. I rubbed spices into the meat with oil for a few minutes in a plastic bag. The flavor was absolutely delightful.

Delicious and full of flavor! I used freshly picked peaches instead of nectarines and swapped red onion for dried cilantro. Next time, I'll try using fresh cilantro, but I didn't have any available this time. I cooked the pork chops on the Foreman grill and they turned out perfectly fine!

Wow! The nectarine salsa is absolutely delightful - I wouldn't make any changes to it! I opted to use half the quantity of pork and cut it into cubes for making kabobs. To enhance the flavor, I included some paprika in the rub and allowed it to marinate for around 6 hours. It turned out to be a fantastic meal!

I made this recipe using both peaches and nectarines. I also substituted cumin seeds since that was the only spice I had on hand. The dish turned out wonderfully!
