I Don't Know Recipe
Ingredients
- 7 small baking potatoes, peeled and sliced
- 1 pound ground beef
- 1 (16 ounce) package frozen mixed vegetables, thawed
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 cup shredded Cheddar cheese
- Salt and pepper to taste
Directions
- Preheat the oven to 350F (175C).
- In a medium bowl, combine the thawed mixed vegetables and the cream of mushroom soup. Stir to mix well, then set aside.
- Place the sliced potatoes into a large saucepan and cover with enough water to fully submerge them. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 5 minutes. Drain and set aside.
- While the potatoes are cooking, crumble the ground beef into a large skillet over medium-high heat. Cook, stirring occasionally, until the beef is browned and fully cooked, breaking up large chunks as it cooks. Drain any excess grease and transfer the cooked beef to the bottom of a 9x13-inch baking dish.
- Spread the vegetable and mushroom soup mixture evenly over the cooked beef.
- Arrange the sliced potatoes on top of the vegetable mixture, layering them evenly. Season with salt and pepper to taste.
- Sprinkle shredded Cheddar cheese evenly over the top of the casserole.
- Bake uncovered in the preheated oven for 25 minutes, or until the cheese is melted and bubbly, and the dish is heated through.

My family loved this recipe. I doubled this for my large family size, and added about 1 cup of milk to the vegy/soup mixture. I also sprinkled cooked/crumbled bacon over the beef once it was in the baking dish. The bacon makes all the difference. Thanks, I will make this again.

I love this title!! Perfect casserole for hard working MOMS. I had2 boxes of scalloped potatoes and canned milk. I added the cheese sauce mix and the milk to make up for my lack of cream of mushroom soup. This was tasty and rib sticking. Thank You Kristen

This has become a family favorite, my husband asked me what was for dinner I told him I didn't care, he told me he didn't know. So he decided to Google " recipe for I don't know" this came up and we gave it a go needless to say I'm making I don't know for dinner again tonight, the only thing we did different was cream of chicken instead because I don't like cream of mushroom.

I have made something like this when I would crave the campfire hobo dinners. One of my favorite cheats though, put the potatoes in the microwave to cook them then slice.....makes it easier for a quicker prep on a weeknight.

This was so much better than I expected... we used fresh broc. and carrots par cooked before I put them in...can of cream of potato soup with some milk ... spices and it was just amazing... by husband went crazy for it. The fresh veggies made it taste so fresh... this is a keeper

Great and super easy! I could see this working with a variety of different vegetables. After reading the reviews, I decided to add some milk to the soup mixture (and I recommend doing that), seasoned the meat and soup mixture to taste (added some garlic powder and onion powder along with salt and pepper), and was generous with the cheese.

Mom made this when my sister and I were kids. Instead of using frozen mixed veggies, Mom would use frozen broccoli. She also doubled the cheese. I want to say she added whatever spices she had on hand as well and added a soup can of milk. Great to make to take a walk down memory lane, but needs a little more gussied up for me now.

My family loved this recipe. I also added about 1/2 can of milk to the soup mixture. And I sprinkled onion powdered on the ground beef. (Next time I might throw in some chopped onion). I also used frozen green peas as the vegetable, I didn't think the mixed vegetables would be good. I will definately make this recipe over and over again. Another thing, I did not peel the potatoes!

This is awesome for a mom of multiple kids! I added some basic seasoning to my meat like garlic and onion, used peas and carrots. It was a definite hit for the family! Next time I'll tweak it a bit like a can of cream of celery instead of 2 cans of mushroom, since I double it, add some green onion and possibly bacon crumbles. I love how this is so versatile!

Kristen! As a mom myself, I felt it was my duty to make this recipe for my two boys and thought my husband would get a kick out of it as well. I was unfortunately lacking a few ingredients and due to a recent freak artisanal yogurt accident in my local grocery store I was unable to obtain them. Thankfully, a spirit of adventure overtook me and I was able to cobble together my own unique rendition of “I don’t know” that my family raved over. Instead of condensed mushroom soup, I blended various meats harvested fresh from my barrel with water until it formed a smooth paste. The meat barrel is always fun for the whole family; the moment my kids hear the screech of the massive lid unscrewing from the base they come running to receive their daily spoonful of broth! I also thought the potatoes on their own might be a little plain, so I rolled them in sand for texture fried them in ocean water! Added such a beachy twist to an already excellent recipe. Perfect for summer!

I made this and it’s basically a deconstructed cottage pie. They called for a 9x13 pan but I used a9x9 and it was perfect. I also added chopped garlic, Italian seasoning, garlic and onion powder. The potatoes are vague. A large russet potato would work. Use a mandolin if you have one. Worcestershire sauce would be a great addition to the hamburger.

I made this for dinner and my dad and I loved it. I made a few tweaks though. I used ground turkey instead of beef, two cans of condensed soup, and seasoned with salt and pepper, generous amounts of garlic powder, and three packets of pizza hut red pepper flakes. Added a little spice ya know. It was so good. Had seconds.
