Ingredients

  • 2 slices thick-cut bacon, chopped
  • 1 cup chopped yellow onion
  • 1 cup chopped red bell pepper
  • 1 pound ground sirloin
  • 8 ounces hot pork country sausage (such as Jimmy Dean)
  • 2 teaspoons chopped garlic
  • 1 (10.75 ounce) can condensed cream of mushroom soup (such as Campbell's)
  • cup whole milk
  • cup sour cream
  • teaspoon kosher salt
  • teaspoon black pepper
  • 1 cup frozen corn kernels
  • 1 cups shredded extra-sharp Cheddar cheese, divided
  • 1 (32 ounce) package frozen tater tots
  • 2 tablespoons chopped fresh flat-leaf parsley

Directions

Step 1: Preheat the oven to 375F (190C) with a rack in the center position.

Step 2: Heat a large cast-iron skillet over medium heat. Add chopped bacon and cook, stirring occasionally, until browned and crispy, about 7 minutes. Once done, transfer the bacon to a paper towel-lined plate using a slotted spoon, reserving 2 tablespoons of the drippings in the skillet.

Step 3: Add the chopped onion and red bell pepper to the skillet with the reserved bacon drippings. Cook, stirring occasionally, until softened, about 4 minutes.

Step 4: Increase the heat to medium-high. Add the ground sirloin and hot pork country sausage to the skillet. Cook, stirring frequently, until the beef is crumbly, browned, and no longer pink, about 6 to 8 minutes.

Step 5: Add the garlic to the skillet and cook, stirring constantly, until fragrant, about 1 minute. Remove from heat, and if necessary, drain off any excess fat.

Step 6: Stir in the cream of mushroom soup, whole milk, sour cream, kosher salt, and black pepper into the meat mixture. Add the frozen corn, bacon, and cup of shredded cheddar cheese. Stir everything until well combined.

Step 7: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the mixture. Then, arrange the frozen tater tots in concentric circles on top of the cheese layer. (You may have about 1 cups of tater tots left over; save them for another use.)

Step 8: Bake the dish in the preheated oven until the top is golden brown and the beef mixture is bubbling, about 35 minutes.

Step 9: Let the dish sit for 5 minutes before serving. Sprinkle with chopped parsley and serve hot.

We really liked this!! I am so accustomed to MY tater tot hotdish and this is….not that! But it IS really good! While I normally have Jimmy Deans hot sausage on standby in my freezer, I only had regular today. I think Hot would have been better. While I had some bacon, pre-cooked, baked and leftover from a previous meal, I don’t think you need it here. I only added because I had a few slices leftover. This also means I didn’t have bacon fat and used a TBLS of olive oil - beginning at step 3 (skipping step 2). Good enough to make again and mix-up the hotdish rotation! Thank you Julia Levy!

My family really enjoyed this. Did make 2 changes, I couldn't find county sausage, so I used sweet Italian. Gave it a nice flavor. And I substituted of celery soup for the cream of mushroom. (can't eat mushrooms). Will be making this again.

Husband liked this, though I found it a bit too creamy for my taste. I also thought the ground beef overpowered the other meats. If I make it again, I will alter accordingly: Half hot sausage, half ground beef plus half a pound of bacon, cooked first and then crumbled. Might try Cream of Celery soup, omit the milk and follow the rest of the recipe as written.

This was very much enjoyed by my fiance and I last night. I used peas instead of corn because we had ao much leftover from Thanksgiving and I didn't drain the sirloin and sausage. I also topped it with diced green onion instead of parsley. It was very tasty and even better for lunch today! I will be making this again soon

This is the best tater tot casserole recipe I've tried so far. Next time I'll try reducing the amount of cream and milk a little because it was a bit too creamy for me, but it was definitely a hit with my picky eaters.

Very good and easy to make! I added yellow bell pepper and omitted the sausage because we won't eat it and used more ground beef. You can really put any vegetables in this and it will turn out tasty! Will make again!

I made it almost as written. Was looking for a recipe to use up tater tots and this fit the bill. Deleted the salt and didn't have the sausage. Was a hit with hubby. Next time will make with peas instead of corn, add more bacon, onion and garlic and try it with the sausage. May also try with noodles or rice instead of tater tots.

What happens between steps 3 and 4. One minute your cooking it the next minute your putting the remaining cheese on top and baking. What’s happens after you turn it off from the stove. Do you just dump it an into a casserole dish with the tater tots on top? Do you layer it with filling cheese and tots. WHAT ARE YOU DOING WITH IT!!! This recipe makes no sense whatsoever!! Am I supposed to just know what to do with it? Like every other recipe I’ve seen like this it is missing the constructing steps!!! Extremely frustrating recipe!!
